Beef and Radish Soup Ingredients- Beef (for soup) 1.5kg (3LB)
- Sesame oil, a little
- Salt, a little
- Black pepper, a little
- Bean sprouts, 2 bags (approx. 200g)
- Scallions or green onions, 2 bunches
- Radish, 1/2 medium (approx. 500g)
- Onion, 1
- Korean green chili peppers, 3
- Water, 1L (4 cups)
Beef and Radish Soup Seasoning Paste Ingredients- Minced garlic, 1 Tbsp
- Red chili flakes (Gochugaru), 3 Tbsp
- Korean soy sauce for soup (Guk-ganjang), 3 Tbsp
- Fish sauce or anchovy sauce (Chamchi-aek), 1 Tbsp
Scallion Oil Ingredients- Scallions or green onions, 1 bunch
- Onion, 1/2
- Red chili flakes (Gochugaru), 3 Tbsp
- Soy sauce (Jin-ganjang), 3 Tbsp
- Avocado oil or cooking oil, 2 Tbsp
- Sesame oil, 4 Tbsp
- Minced garlic, 1 Tbsp

- Korean soy sauce for soup (Guk-ganjang), 3 Tbsp
- Fish sauce or anchovy sauce (Chamchi-aek), 1 Tbsp
Scallion Oil Ingredients- Scallions or green onions, 1 bunch

- Soy sauce (Jin-ganjang), 3 Tbsp
- Avocado oil or cooking oil, 2 Tbsp
- Sesame oil, 4 Tbsp
Cooking Instructions
Step 1
First, prepare about 1.5kg (3LB) of beef. It’s best to use beef cut specifically for soups.
Step 2
Heat a pot and add a little sesame oil. Add the beef, season lightly with salt and pepper, and stir-fry over medium heat until the surface of the beef is browned.
Step 3
Prepare the fresh vegetables for your beef and radish soup. Slice the radish into bite-sized pieces or julienne it. Thinly slice the onion. Chop the scallions or green onions, and slice the Korean green chili peppers diagonally.
Step 4
Once the beef is sufficiently browned, add the prepared radish to the pot and stir-fry with the beef for about 2-3 minutes to bring out the radish’s natural sweetness.
Step 5
Now it’s time to add the seasoning paste for the beef and radish soup. Start by adding 1 tablespoon of minced garlic to infuse the aroma.

Add 3 tablespoons of red chili flakes (Gochugaru) for a spicy kick and stir-fry together.
Step 7
Add 3 tablespoons of Korean soy sauce for soup (Guk-ganjang) to deepen the flavor of the broth.

Add 1 tablespoon of fish sauce or anchovy sauce (Chamchi-aek) for an extra umami boost.

Add all the seasoning paste ingredients and stir-fry for 1-2 minutes, ensuring the beef and radish are well coated. Be careful not to let the seasonings burn.

If you prefer a spicier soup, add the diagonally sliced Korean green chili peppers at this stage and stir-fry them briefly.

Next, let’s make the fragrant scallion oil. In a separate pan, combine the chopped scallions (or green onions), sliced onion, 3 tablespoons of red chili flakes, 3 tablespoons of soy sauce, 2 tablespoons of avocado oil (or cooking oil), and 4 tablespoons of sesame oil. Mix well.
Step 12
Cook over high heat for a short time, stirring quickly to prevent burning, to create the scallion oil. Be careful not to overcook it, as it can burn.

Pour 1L (4 cups) of water into the pot with the stir-fried beef and radish and bring it to a boil. Once the broth is simmering, add all the prepared scallion oil to enhance the flavor.

Finally, add the fresh bean sprouts generously to maintain their crisp texture. Bean sprouts cook quickly and can become mushy if overcooked, so adding them at the very end is best.

Cover the pot and simmer over medium heat for about 5-10 minutes, allowing all the ingredients to cook through and the flavors to meld beautifully.
