Main Ingredients

  • 2 fresh mackerel
  • 400-450g Korean radish (approx. 3 thick slices)
  • 1/2 stalk green onion
  • 1/3 onion
  • 1 hot pepper (e.g., Cheongyang chili)

Seasoning Mix

  • 2 Tbsp red pepper flakes (Gochugaru)
  • 1 Tbsp red pepper paste (Gochujang)
  • 1 Tbsp sugar
  • 1/3 Tbsp salt
  • 3 Tbsp soy sauce (for cooking)
  • 1 Tbsp cooking wine (Mirin)
  • 1 Tbsp ginger syrup (or 1 Tbsp plum syrup)
  • 1 Tbsp lemon juice
  • 1 Tbsp tuna extract (or a pinch of MSG)
  • Pinch of black pepper
  • 500ml water

Cooking Instructions

Step 1

First, wash the Korean radish thoroughly and prepare it. Use about 400-450g, cut into approximately 3 thick slices suitable for layering at the bottom of the pot.

Step 1

Step 2

If the radish skin is clean, you can leave it on without peeling to retain nutrients and flavor. Just remove any unsightly parts.

Step 2

Step 3

Cut the radish into bite-sized pieces that will cook well and be easy to eat. If they are too large, they won’t cook through, and if too small, they may become mushy.

Step 3

Step 4

Arrange the prepared radish pieces to cover the bottom of the pot evenly. The radish will absorb the seasonings and become tender, creating a delicious base.

Step 4

Step 5

Rinse the mackerel under running water, then pat it dry thoroughly with paper towels. Next, remove the skin from the mackerel. Removing the skin helps reduce the fishy odor and makes the dish cleaner tasting.

Step 5

Step 6

An easy way to remove the mackerel skin is to gently scrape one end of the fish. A thin membrane should start to lift. Grasp this membrane and gently pull to peel off the skin. Be careful as you do this.

Step 6

Step 7

Place the prepared mackerel pieces neatly on top of the radish. Ensure the fish is well-covered by the seasonings and vegetables for even cooking.

Step 7

Step 8

Slice the onion thinly and spread it evenly over the mackerel. The onion will soften and add sweetness and depth of flavor.

Step 8

Step 9

Slice the green onion diagonally and the hot pepper diagonally as well, then place them on top. These will add a spicy kick and aromatic flavor. Feel free to adjust the amount of hot pepper to your preference.

Step 9

Step 10

Now, pour the prepared seasoning mixture evenly over the mackerel and vegetables. It’s important for the sauce to penetrate the ingredients well.

Step 10

Step 11

Cover the pot with a lid and bring to a boil over high heat. Once the liquid starts boiling, reduce the heat to medium-low and simmer for about 15-20 minutes. Check the tenderness of the radish and adjust the cooking time accordingly. The dish is ready when the sauce has thickened slightly.

Step 11

Step 12

Your nutritious and delicious braised mackerel with radish is complete! Enjoy it with a warm bowl of rice.
