First, prepare the vegetables. Wash the cucumber thoroughly, remove the seedy core, and slice it thinly into matchsticks. Peel the onion and also slice it thinly. Place the sliced cucumber and onion together in a bowl.

Drain the liquid from the canned whelks into a separate container; don’t discard it as we’ll use a little in the sauce later. Cut the whelks into bite-sized pieces. If they are too large, they might be difficult to eat with the noodles.

Cook the somyeon noodles in boiling water until they are perfectly chewy. Refer to the package instructions for cooking time, but adjust to your preference. After cooking, rinse the noodles under cold water and drain them completely to maintain their chewy texture.
