Main Ingredients- 1 can (250g) Canned Whelks
- 1/2 Onion
- 5cm Carrot
- 5cm Cucumber
- 1 handful Cabbage
- 1/2 Tbsp Minced Garlic
- 3-4 Tbsp Canned Whelk Liquid
- 1 serving Somyeon (thin wheat noodles)
Baek Jong-won’s Special Sauce- 3 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Vinegar
- 3 Tbsp Sugar
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Sesame Oil
- 1/2 Tbsp Sesame Seeds
- 3 Tbsp Gochujang (Korean chili paste)

Cooking Instructions
Step 1
First, prepare one can (250g) of canned whelks. Don’t discard the liquid from the can; set it aside separately. This liquid will be very useful later for adjusting the sauce’s consistency and adding umami.
Step 2
Wash and prepare your vegetables. Cut the carrot, onion, and cucumber into approximately 5cm lengths. Prepare about a handful of cabbage. Thinly julienne all of these vegetables. Thin slicing ensures they absorb the sauce well and provides a pleasant texture.
Step 3
Baek Jong-won’s secret to the whelk salad sauce is the ‘1:1:1’ ratio! Mix gochujang, vinegar, and sugar in equal parts. I used 3 tablespoons of each. Then, add 2 tablespoons of gochugaru for spiciness, 1 tablespoon of sesame oil for nutty flavor, and finally, 1/2 tablespoon of sesame seeds to complete the delicious sauce.
Step 4
Prepare one serving of somyeon noodles. Cook them in plenty of boiling water according to package directions. Once cooked, quickly rinse the noodles under cold water to stop the cooking, then drain them in a colander. This keeps the noodles firm and chewy.
Step 5
In a large bowl, combine all the julienned vegetables. Add 1/2 tablespoon of minced garlic and the prepared whelk meat. It’s best to cut the whelks into bite-sized pieces for a good chew.
Step 6
Now it’s time to add the sauce. Pour all of the prepared Baek Jong-won’s special sauce into the bowl. Add 3-4 tablespoons of the canned whelk liquid. This liquid helps season the sauce and enhances its overall flavor. Adjust the amount of liquid based on your preference.
Step 7
Gently mix everything together with your hands until the ingredients and sauce are well combined. You can either mix the somyeon noodles in with the other ingredients, or serve the noodles separately and top them with the mixed salad. The choice is yours! I found it easier to mix everything together in one bowl.
