It’s so difficult to prepare dinner for my husband who comes home late from work… I find that combining tteokbokki (rice cakes) and sundae (Korean blood sausage), both popular snacks, makes for a simple yet satisfying meal! This dish is a delightful mix of chewy sundae, tender rice cakes, and crisp vegetables coated in a sweet and spicy sauce. It’s a crowd-pleaser for all ages. Let’s make an ordinary day special with this fantastic stir-fried sundae recipe!

Main Ingredients

  • Store-bought sundae, 2 servings (approx. 400g)
  • Tteokbokki rice cakes, 200g
  • Square fish cakes, 2 sheets (approx. 100g)
  • 1 onion (medium)
  • 1/2 carrot (small)
  • 1 green onion

Seasoning

  • Soy sauce, 1 tsp
  • Sugar, 3 Tbsp
  • Salt, 1 tsp
  • Gochujang (Korean chili paste), 1.5 Tbsp
  • Beef seasoned powder (or MSG for flavor enhancement), 1 tsp
  • Black pepper, a pinch
  • Water, 500ml

First, rinse the tteokbokki rice cakes lightly in cold water. This prevents them from sticking together. If the rice cakes are hard, soaking them in warm water for a few minutes will soften them.

Prepare about 2 servings (approx. 400g) of store-bought sundae. Remove the casing and cut the sundae into bite-sized pieces, about 1.5-2 cm thick. Be careful not to cut too forcefully to prevent the filling from spilling out.

Now, let’s prepare the vegetables for the stir-fry. Slice the onion into strips. Cut the carrot into half-moon shapes or thin slices. Chop the green onion diagonally. Also, cut the square fish cakes into bite-sized pieces, such as triangles or strips.

It’s time to make the delicious sauce! In a pot or deep pan, pour 500ml of water. Add 3 Tbsp of sugar, 1 tsp of salt, 1 tsp of soy sauce, 1.5 Tbsp of gochujang, and 1 tsp of beef seasoned powder. Whisk well to combine all the seasonings, ensuring there are no lumps.

Once the seasoned water starts boiling, add the tteokbokki rice cakes first and let them cook. When the rice cakes are tender, add the fish cakes, onion, and green onion. Reduce the heat to medium and let it simmer for about 5 minutes, allowing the ingredients to absorb the flavors of the sauce.

Heat a lightly oiled pan over medium heat. Add the prepared carrots, onion, green onion, and sundae. Stir-fry everything together, making sure the ingredients don’t clump. Sprinkle in some black pepper. Cook until the sundae and vegetables are cooked through and the sauce has thickened slightly. This dish is complete! You can add more salt to taste if desired.
