  • 500g Sundae (Korean blood sausage, optional: add intestines to your preference)
  • 2 handfuls Cabbage (approx. 1/4 head)
  • 1/2 Onion
  • 15 Perilla leaves (Kkaennip)
  • 1/2 Green onion (scallion)
  • Cooking oil, as needed
  • 1 Tbsp Sesame oil
  • 2 Tbsp Perilla powder

Stir-Fry Sauce

  • 3 Tbsp Gochugaru (Korean chili flakes)
  • 2 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Sugar
  • 1 Tbsp Minced garlic
  • 2 Tbsp Minced green onion
  • 1 Tbsp Soy sauce
  • 1 Tbsp Oyster sauce
  • 2 Tbsp Cheongju (rice wine) or Mirin
  • 2 Tbsp Mirin (or rice wine)
  • A little Ginger juice (or a pinch of ginger powder)
  • 1/2 cup Water

Cooking Instructions

First, let’s make the delicious sauce for our stir-fried sundae! In a large bowl, combine 3 tablespoons of gochugaru, 2 tablespoons of gochujang, 1 tablespoon of sugar, 1 tablespoon of minced garlic, 2 tablespoons of minced green onion, 1 tablespoon of soy sauce, and 1 tablespoon of oyster sauce. Add 2 tablespoons of cheongju and 2 tablespoons of mirin to remove any gamey odors, and a little ginger juice for extra flavor. Finally, pour in 1/2 cup of water and stir well until all ingredients are thoroughly mixed to create the sundae stir-fry sauce.

Now, it’s time to prepare the sundae. Commercially available sundae can be lightly blanched in boiling water before stir-frying. This helps prevent it from bursting and results in a chewier texture. Prepare about 500g of sundae. I also purchased fresh intestines from the market and added them along with the sundae (total of 500g sundae + intestines).

Let’s prepare the vegetables that will add flavor to the stir-fry. Slice half an onion into thick strips. Prepare about 2 handfuls of cabbage and cut it into uniform pieces. Wash the perilla leaves thoroughly, pat them dry, and then roughly chop them. Slice the green onion diagonally to add a fresh aroma.

Heat a pan over medium heat and add about 1 tablespoon of cooking oil. First, add the sliced cabbage and onion and stir-fry until they are slightly softened. Stir-frying the vegetables first brings out their natural sweetness and improves their texture.

Once the cabbage and onion are lightly stir-fried, pour in all the prepared sundae stir-fry sauce. Mix well with the vegetables and continue to stir-fry over medium heat, ensuring it doesn’t burn. It’s important to stir-fry sufficiently so the sauce permeates the vegetables well.

When the sauce and vegetables are well combined and fragrant, add the prepared sundae and stir-fry together. Continue to cook for about 3-4 minutes until the sundae is coated in the sauce and cooked through. It’s best to cook over medium heat rather than high heat to prevent the sundae from bursting and to ensure the sauce is evenly distributed.
