This recipe features chewy sundae stir-fried with a mouthwatering spicy sauce and crisp vegetables. While delicious on its own, sometimes a savory stir-fry with sundae and fresh veggies is a delightful change. It makes a great light meal, but it’s also an unbeatable choice for a late-night snack or a pairing with drinks.
Stir-fried Sundae Ingredients- Sundae 500g
- 1/5 Cabbage (thickly sliced)
- 1/5 Carrot (thickly sliced)
- 1/2 Onion (thickly sliced)
- 1/2 Green Onion (thickly sliced)
- 10 Perilla Leaves (thinly sliced)
- 1 Cheongyang chili pepper (chopped, optional)
- 1 Red chili pepper (chopped, optional)
- 2 Tbsp Perilla Seed Powder
Spicy and Sweet Sauce Ingredients- 3 Tbsp Gochujang (Korean chili paste)
- 1.5 Tbsp Gochugaru (Korean chili flakes)
- 1.5 Tbsp Soy Sauce
- 2 Tbsp Mirin (cooking wine)
- 1 Tbsp Minced Garlic
- 1 Tbsp Oligodang (corn syrup)
- 0.3 Tbsp Sugar (about 1/3 tsp)
- 1 Tbsp Sesame Oil
- Pinch of Black Pepper
- 3 Tbsp Gochujang (Korean chili paste)
- 1.5 Tbsp Gochugaru (Korean chili flakes)
- 1.5 Tbsp Soy Sauce
- 2 Tbsp Mirin (cooking wine)
- 1 Tbsp Minced Garlic
- 1 Tbsp Oligodang (corn syrup)
- 0.3 Tbsp Sugar (about 1/3 tsp)
- 1 Tbsp Sesame Oil
- Pinch of Black Pepper
Cooking Instructions
Step 1
First, prepare the sundae. Lightly blanching the sundae in boiling water can make it cleaner and prevent it from bursting while stir-frying. Cut the sundae into bite-sized pieces, about 2cm thick. Slicing them thickly helps maintain their shape when cooked, preventing them from breaking apart. For the vegetables, slice the cabbage, onion, and carrot relatively thickly to retain a pleasant crunch. Thinly slice the perilla leaves, as they will be used as a garnish. If you like a bit of heat and color, finely chop the Cheongyang and red chili peppers.
Step 2
Next, let’s make the spicy and sweet sauce that will define the flavor of your sundae stir-fry. In a bowl, combine 3 tablespoons of gochujang, 1.5 tablespoons of gochugaru, 1.5 tablespoons of soy sauce, and 2 tablespoons of mirin. Add 1 tablespoon of oligodang and 0.3 tablespoons (about 1/3 teaspoon) of sugar for sweetness. Stir in 1 tablespoon of minced garlic for aroma and 1 tablespoon of sesame oil for richness. Finish with a pinch of black pepper. Mix all the ingredients thoroughly until the sauce is well combined.

Now, let’s start cooking. Heat a generous amount of cooking oil in a pan over medium-low heat. Add the thickly sliced green onions and sauté until fragrant and slightly golden, infusing the oil with their aroma. Once the green onions are aromatic, the pan is ready for the other vegetables.

When the green onion aroma is released, add the thickly sliced cabbage, carrots, and onions to the pan. Stir-fry them together. Don’t worry if the vegetables seem to take up a lot of space initially; they will shrink as they cook. Sauté the vegetables until they become slightly translucent, allowing their natural sweetness to develop.

Once the vegetables are partially cooked, add the prepared sundae pieces to the pan. Stir-fry everything together for about 2-3 minutes, allowing the sundae to absorb the flavors and the ingredients to meld together. Be careful not to overcook the sundae, as it can become tough.
Step 6
Now, pour all the prepared spicy and sweet sauce into the pan. Stir well to coat the sundae and vegetables evenly with the sauce. After adding the sauce, toss in the thinly sliced perilla leaves and the chopped chili peppers. Stir-fry over high heat for a short time to keep the vegetables crisp and the chili peppers fresh.

To add another layer of nutty flavor, generously sprinkle in 2 tablespoons of perilla seed powder. Stir it in until well combined with all the ingredients. The nutty aroma and taste will elevate the dish significantly. You can adjust the amount of perilla seed powder to your preference for a more customized flavor.

Once all the ingredients are well combined and the dish is deliciously fragrant, turn off the heat. Transfer the finished sundae stir-fry to a serving plate.
