Main Ingredients

  • 300g Sundae (Korean blood sausage – choose your favorite type)
  • 1 Squid (cleaned, guts and backbone removed)
  • 3 Cabbage leaves (cut into bite-sized pieces)
  • 6 Perilla leaves (for a fresh, aromatic touch)
  • 1 Green onion (use both white and green parts)
  • 1/2 Onion (adds sweetness and depth of flavor)
  • 1 Cheongyang chili pepper (optional, for extra spice)
  • 1 Tbsp Sesame oil (for nutty aroma)
  • 1 Tbsp Toasted sesame seeds (for garnish)

Seasoning Ingredients

  • 1 Tbsp Gochujang (Korean chili paste – base for spiciness)
  • 2 Tbsp Gochugaru (Korean chili flakes – for color and heat)
  • 1.5 Tbsp Soy sauce (for umami)
  • 1 Tbsp Sugar (adjust to your sweetness preference)
  • 1 Tbsp Mirin (or cooking wine – to remove gamey odors and enhance flavor)
  • 1 Tbsp Minced garlic (for fragrant garlic notes)
  • Pinch of Black pepper (adds subtle flavor)
  • 1 Tbsp Perilla seed powder (for a nutty and smooth finish)

Cooking Instructions

Wash all vegetables thoroughly. Cut the cabbage leaves into approximately 2cm bite-sized pieces. Roll the perilla leaves and thinly slice them into about 0.5cm strips to preserve their aroma. Slice the onion similarly to the perilla leaves. Slice the green onion and Cheongyang chili pepper diagonally. For the sundae, it’s best to briefly boil or steam it before cutting into bite-sized pieces for a softer texture. Clean the squid, remove the skin, and cut the body into rings or desired pieces.

In a large bowl, combine all the seasoning ingredients: 1 Tbsp gochujang, 2 Tbsp gochugaru, 1.5 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp mirin, 1 Tbsp minced garlic, a pinch of black pepper, and 1 Tbsp perilla seed powder. Mix well with a spoon until a delicious sauce is formed. Ensure all the seasonings are dissolved.
