How to Make Delicious Stir-Fried Squid Rice Bowl
This recipe is for a spicy and sweet Ojingeo Deopbap, featuring tender squid and crisp vegetables. I bought pre-prepared squid specifically to make this for my husband, who loves it. You can easily recreate this restaurant-quality dish at home.
Main Ingredients- 2 squid, cleaned (body and tentacles)
- 1 medium onion
- 1/4 carrot
- 2 medium potatoes
- 1 Tbsp minced garlic
- 1 green onion
- 1 Korean green chili pepper (optional)
Seasoning Sauce- 2 Tbsp gochugaru (Korean chili flakes)
- 3 Tbsp soy sauce
- 2 Tbsp oligo당 (oligosaccharide) or corn syrup
- 1 Tbsp tuna extract (or fish sauce)

Cooking Instructions
Step 1
Rinse the squid thoroughly under running water. Briefly blanch the squid in boiling water for about 30 seconds to 1 minute – just until it changes color, not fully cooked. Immediately transfer it to cold water to stop the cooking process and drain well. This step ensures the squid is tender and chewy. Slice the blanched squid into bite-sized pieces and place them in a colander to drain any excess water completely.
Step 2
Thinly slice the onion, carrot, green onion, and Korean green chili pepper (if using). Peel the potatoes and cut them into similar-sized matchsticks. Cutting all vegetables into uniform sizes will help them cook evenly. Set aside the prepared vegetables.
Step 3
Heat 1-2 tablespoons of olive oil (or cooking oil) in a pan over medium-low heat. Add the minced garlic and sauté until fragrant, creating a garlic-infused oil. Be careful not to burn the garlic.
Step 4
Add the julienned potatoes to the pan with the garlic oil and stir-fry over medium heat until they begin to soften and turn slightly translucent. Then, add the sliced onion, carrot, and green onion. Continue stir-frying until the vegetables are tender-crisp.
Step 5
Once the vegetables are partially cooked, add the prepared squid to the pan. Stir-fry everything together over high heat for just a minute or two. Avoid overcooking the squid, as it can become tough. The goal is to incorporate it with the vegetables and sauce.
Step 6
Pour the seasoning sauce ingredients (gochugaru, soy sauce, oligo당, and tuna extract) over the ingredients in the pan. Stir-fry quickly over high heat to ensure the sauce coats everything evenly. Finish by drizzling in a bit of sesame oil and sprinkling with sesame seeds. Mix well and the stir-fried squid is ready.
Step 7
Taste the stir-fried squid and adjust seasoning if necessary by adding a little more soy sauce if it’s too bland. To serve, place cooked rice in a bowl, top with a generous portion of the spicy stir-fried squid, and garnish with a final sprinkle of sesame seeds. Enjoy your delicious Ojingeo Deopbap!
