  • Category : Main dish
  • Ingredient Category : Seafood
  • Occasion : Everyday
  • Cooking : Stir-fry
  • Servings : 3 servings
  • Difficulty : Beginner

Main Ingredients

  • 4 medium-sized squids, cleaned
  • 1/4 onion
  • 1 stalk green onion
  • 5 perilla leaves (깻잎)

Spicy & Sweet Sauce

  • 1 Tbsp soy sauce
  • 1 Tbsp sugar
  • 1 Tbsp corn syrup or other liquid sweetener
  • 1 Tbsp cooking wine (mirin or sake)
  • 1 Tbsp minced garlic
  • 2 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp gochugaru (Korean chili flakes)

Cooking Instructions

Step 1

Prepare 4 medium-sized squids. If the skin is partially peeled, use a paper towel to gently wipe away any remaining skin for a cleaner presentation. (If the squid is already clean, you can skip this step.)

Step 1

Step 2

Cut the cleaned squid into bite-sized pieces, about 1 to 1.5 cm wide. Avoid cutting them too thinly, as this can reduce their chewy texture. Aim for a moderate thickness.

Step 2

Step 3

Thinly slice the onion or cut it into quarters. Cut the green onion diagonally. Slicing them this way helps to enhance their flavor when cooked.

Step 3

Step 4

Wash the perilla leaves thoroughly, pat them dry, and then cut them lengthwise. The aromatic quality of the perilla leaves will add a wonderful dimension to the stir-fry.

Step 4

Step 5

In a small bowl, combine all the sauce ingredients: 1 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp corn syrup, 1 Tbsp cooking wine, 1 Tbsp minced garlic, 2 Tbsp gochujang, and 1 Tbsp gochugaru. Mix well until smooth and well combined. (Tip: Preparing the sauce in advance will save you time during cooking.)

Step 5

Step 6

Heat 1 to 2 Tbsp of cooking oil in a pan over medium-low heat. Add the sliced green onions and stir-fry until fragrant and a delicious green onion oil is created. (Tip: The longer you sauté the green onions, the deeper the flavor will be.)

Step 6

Step 7

Once the green onion oil is aromatic, add the prepared squid to the pan. Stir-fry over high heat quickly. As soon as the squid turns opaque and starts to cook, move on to the next step. Be careful not to overcook the squid at this stage.

Step 7

Step 8

When the squid is slightly cooked, add the sliced onions to the pan and continue to stir-fry. Cook until the onions become translucent. (Tip: Overcooking the squid will make it tough, so be mindful of the cooking time.)

Step 8

Step 9

Once the onions are cooked, add the prepared sauce to the pan. Stir everything together to ensure the squid and vegetables are evenly coated with the sauce. Stir-fry for 1 to 2 minutes, making sure to adjust the heat to prevent burning.

Step 9

Step 10

Finally, add the lengthwise-cut perilla leaves and stir-fry briefly. Stir-frying them only slightly helps to preserve their fresh aroma and pleasant texture.

Step 10

Step 11

Your delicious stir-fried squid is ready! It’s fantastic served over warm rice as a rice bowl (덮밥 – deopbap) or enjoyed with fresh lettuce wraps. Enjoy your meal!
