When you’re in the mood for something fiery and delicious, this squid stir-fry, loaded with fresh vegetables and chewy squid, is an absolute winner! Main Ingredients- 1/2 squid (body only, approx. 150-200g)
- 2 cabbage leaves (approx. 50g)
- 1/4 zucchini (approx. 50g)
- 1/2 green onion (approx. 50g)
- 1/2 onion (approx. 70g)
- A pinch of sesame seeds (for garnish)
Spicy and Sweet Sauce- 2 Tbsp soy sauce
- 2 Tbsp gochugaru (Korean chili flakes, adjust to spice preference)
- 1 Tbsp gochujang (Korean chili paste)
- 1.5 Tbsp oligo당 (oligosaccharide, or substitute with sugar or corn syrup)
- A pinch of black pepper
- 1 Tbsp cooking wine (mirin or sake, to remove fishy odor)
- 1 Tbsp minced garlic
- 2 Tbsp soy sauce
- 2 Tbsp gochugaru (Korean chili flakes, adjust to spice preference)
- 1 Tbsp gochujang (Korean chili paste)
- 1.5 Tbsp oligo당 (oligosaccharide, or substitute with sugar or corn syrup)
- A pinch of black pepper
- 1 Tbsp cooking wine (mirin or sake, to remove fishy odor)
- 1 Tbsp minced garlic
Cooking Instructions
Step 1
First, in a small bowl, combine all the sauce ingredients (soy sauce, gochugaru, gochujang, oligo당, black pepper, cooking wine, and minced garlic). Mix them thoroughly to create the sauce in advance. Ensure all ingredients are well blended.
Step 2
Rinse the squid thoroughly and remove the internal organs and quill. Make diagonal cuts on the inside of the squid body. This helps the sauce penetrate better and makes for a prettier presentation when cooked.
Step 3
Cut the scored squid into bite-sized pieces. Be careful not to cut them too small, as they will shrink when cooked. Aim for a size that’s easy to eat.

Chop the cabbage into thick strips. Slice the zucchini into half-moon shapes or similar bite-sized pieces. Cut the onion into pieces roughly the same size as the squid. Slice the green onion diagonally.
Step 5
Heat a lightly oiled pan over medium heat. Add the diagonally sliced green onions and stir-fry until fragrant. Once the aroma is released, add the prepared squid and begin stir-frying.
Step 6
When the squid turns from translucent to opaque white, and about 1/3 of the way cooked,

add all the pre-made sauce to the pan,

and stir-fry together with the squid for a short while until the sauce coats the squid evenly. Be mindful not to overcook the squid, as it can become tough.
Step 9
Once the sauce is well combined and stir-fried with the squid, add all the chopped vegetables (cabbage, onion, zucchini).
Step 10
Turn the heat to high and quickly stir-fry the vegetables until they are slightly softened but still retain a crisp texture. Avoid overcooking them until they become mushy. Stir-fry for about 1-2 minutes.
Step 11
Finally, turn off the heat and sprinkle with sesame seeds to garnish. This dish is delicious served generously over a bowl of freshly cooked rice as a rice bowl, or mixed with boiled somen noodles for a hearty squid noodle dish. You can also add seaweed flakes to your liking!
