Tender squid and crisp vegetables come together in this incredibly flavorful spicy and sweet stir-fried squid, a dish loved by everyone, young and old! We’re using 4 market-fresh squids for a generous portion. To make sure even children can enjoy it without it being too spicy, we’ve perfected the sweet and spicy sauce ratio. Main Ingredients- 4 cleaned squids
- 3 Tbsp cooking oil
- 1 Tbsp minced garlic
- 10 cm leek (mainly the white part)
- 1/2 Tbsp vinegar (for cabbage)
- 2 handfuls of cabbage (approx. 1/4 small head)
- 1 Tbsp sugar (for stir-frying)
- A sprinkle of sesame seeds (for garnish)
Spicy & Sweet Sauce for Stir-fried Squid- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp cooking wine (like mirin)
- 6 Tbsp soy sauce
- 1 Tbsp sugar
- 0.5 Tbsp minced garlic
- 2 Tbsp gochugaru (Korean chili flakes)

Cooking Instructions
Step 1
Rinse the fresh squids thoroughly under cold running water multiple times. Without removing the skin, cut them into bite-sized pieces (about 2-3 cm wide). Cut the tentacles into manageable pieces as well.
Step 2
Shred the cabbage into strips about 1.5 cm thick. Place the shredded cabbage in a bowl, add just enough water to cover it, and sprinkle in 1/2 Tbsp of vinegar. Let it soak for about 5 minutes to enhance its crispness and remove any unwanted odors. Squeeze out excess water before using.
Step 3
Cut the leek into 10 cm lengths. Using the white part will add a more fragrant flavor.
Step 4
Heat a wok or deep pan over medium-low heat. Add 3 Tbsp of cooking oil, minced garlic, and the chopped leeks. Sauté slowly until fragrant. Be careful not to burn the garlic; cook until it’s lightly golden.
Step 5
Once the aromatics are fragrant, add the prepared squid and the squeezed cabbage to the pan. Increase the heat to high and stir-fry quickly. Cook until the squid turns opaque. Avoid overcooking, as it can become tough.
Step 6
When the squid and vegetables are partially cooked, add 1 Tbsp of sugar. This will coat the vegetables and squid, adding a glossy sheen and enhancing the umami flavor.
Step 7
In a small bowl, combine all the sauce ingredients: 2 Tbsp gochugaru, 2 Tbsp cooking wine, 6 Tbsp soy sauce, 1 Tbsp sugar, and 0.5 Tbsp minced garlic. Mix well until the sugar is dissolved to create the sauce.
Step 8
Pour the prepared sauce into the pan with the squid and vegetables. Stir-fry quickly over high heat until the sauce evenly coats everything and thickens slightly, giving the squid a beautiful glaze.
Step 9
Finally, sprinkle generously with sesame seeds for garnish. Your delicious spicy and sweet stir-fried squid is ready! Serve it over warm rice for a wonderful meal.
