First, prepare the vegetables. Slice the green onions, red chili pepper, and green chili pepper diagonally about 0.5cm thick; this adds color and a pleasant aroma. Slice the onion into 1cm wide strips for sweetness and crunch, and cut the carrot into 0.5cm thick half-moons or bite-sized pieces. If you’re adding Cheongyang chili peppers for extra heat, remove the seeds and mince them finely or slice them diagonally.

Cut the prepared giant squid into bite-sized pieces, about 2-3cm in length. It’s best to cut the squid just before cooking to prevent it from becoming tough. In a bowl, combine 4 Tbsp of gochujang, 4 Tbsp of gochugaru, 5 Tbsp of soy sauce, 1 Tbsp of sugar, 2 Tbsp of oligodang, a pinch of black pepper, sesame oil, and sesame seeds. Mix well to create a delicious sauce. You can substitute honey for sugar, and adjust the sweetness to your preference.

Heat a wide pan over medium heat and add 1-2 Tbsp of cooking oil. Add the sliced onion and carrot first and stir-fry.
