We made spicy and sweet stir-fried pork with a fresh lettuce salad. It’s hard to tell who the star is… isn’t meat always the main character? But the lettuce is in season and so delicious, it has become a ‘meat thief’! Enjoy a hearty and delicious meal at home with this recipe.
Spicy and Sweet Stir-fried Pork- Pork neck or shoulder 600g
- Onion 1/2
- Green onion 1 stalk
- Cooking oil 1 Tbsp
- Sesame oil 1 Tbsp
- Sesame seeds 1 tsp
Pork Marinating Ingredients- Soy sauce 1 Tbsp
- Ginger juice 1 tsp
- Cooking wine (Mirin) 1 Tbsp
- Minced garlic 1 Tbsp
- Pepper to taste
Stir-fried Pork Sauce- Gochujang (Korean chili paste) 2 Tbsp

- Gochugaru (Korean chili flakes) 3 Tbsp

Cooking Instructions
Step 1
First, prepare the vegetables for the stir-fried pork. Slice the onion and cut the green onion diagonally. Gently pat the pork with paper towels to remove any excess blood. This helps to eliminate any gamey smell and allows the marinade to penetrate better.
Step 2
This is a crucial step for the flavor of your stir-fried pork: marinating the meat. In a bowl, combine the pork with 1 Tbsp soy sauce, 1 tsp ginger juice, 1 Tbsp cooking wine, 1 Tbsp minced garlic, and a pinch of pepper. Mix well and let it marinate for about 20 minutes. This will make the pork much more tender and remove any unpleasant odors.
Step 3
Prepare the sauce for the delicious stir-fried pork in advance. In a bowl, combine 2 Tbsp gochujang, 2 Tbsp soy sauce, 3 Tbsp gochugaru, 2 Tbsp sugar, 2 Tbsp oligosaccharide, 1 Tbsp cooking wine, and 1 Tbsp minced garlic. Stir until the sugar is dissolved. Having the sauce ready will make the cooking process much smoother.
Step 4
Heat 1 Tbsp of cooking oil in a pan over high heat. Add the marinated pork and stir-fry until it’s about 80% cooked. Then, add the pre-made stir-fried pork sauce and continue to stir-fry quickly over high heat. This method prevents the pork from burning and ensures the sauce coats the meat evenly, creating a deep flavor. You’ll notice the pork glistening as it cooks with the sauce.
Step 5
Add the sliced onion and green onion to the pan with the sauced pork. Stir-fry briefly until the vegetables are slightly tender but still retain some crispness. Avoid overcooking the vegetables, as they can become soggy. Keep the heat high and cook for a short time.
Step 6
Finally, drizzle in 1 Tbsp of sesame oil and sprinkle 1 tsp of sesame seeds for a nutty aroma. Give it a final toss, and your delicious spicy and sweet stir-fried pork is ready!

Now, let’s make the refreshing lettuce salad! Wash the lettuce thoroughly under cold running water and drain it completely. Excess water can dilute the dressing. Tear the dried lettuce into bite-sized pieces by hand.

Time to make the dressing for the lettuce salad. In a bowl, combine 2 Tbsp soy sauce, 1 Tbsp minced garlic, 1 Tbsp sugar, 1 tsp fish sauce, 1 Tbsp vinegar, 2 Tbsp gochugaru, 1 Tbsp sesame oil, and 1 tsp toasted sesame seeds. Whisk well until the sugar is dissolved and all ingredients are well combined.
Step 9
Add the torn lettuce, sliced onion, and minced green onion to the prepared dressing. Gently toss everything together. Lettuce wilts quickly, so it’s best to dress the salad right before serving to maintain its crispness. Mix gently to ensure the dressing coats everything evenly.
