An irresistible spicy and sweet stir-fried pork dish that will have you coming back for more! The combination of stir-fried kimchi, crisp shiitake mushrooms, and onions creates a fantastic flavor profile. Main Ingredients- 600g pork hind leg (cut into bite-sized pieces)
- 1/2 onion (sliced thickly)
- 1 shiitake mushroom (stem removed, thinly sliced)
- 1/7 carrot (thinly sliced)
- 3 pieces of well-fermented kimchi (shake off excess filling, use only the cabbage part)
Seasoning Ingredients- 1.5 Tbsp sugar
- 3 Tbsp soy sauce
- Pinch of black pepper
- 3 Tbsp gochugaru (Korean chili flakes)
- 4 Tbsp gochujang (Korean chili paste)
- 2 Tbsp minced garlic
- 2 Tbsp oligodang (corn syrup or rice syrup)
- 5 Tbsp mirin (cooking wine)
- 1.5 Tbsp sugar
- 3 Tbsp soy sauce
- Pinch of black pepper
- 3 Tbsp gochugaru (Korean chili flakes)
- 4 Tbsp gochujang (Korean chili paste)
- 2 Tbsp minced garlic
- 2 Tbsp oligodang (corn syrup or rice syrup)
- 5 Tbsp mirin (cooking wine)
Cooking Instructions
Step 1
Cut the pork hind leg into approximately 3cm (bite-sized) pieces.
Step 2
In a bowl, combine the cut pork with 1.5 Tbsp sugar, 3 Tbsp soy sauce, and a pinch of black pepper. Mix thoroughly. Cover with plastic wrap and refrigerate for 30 minutes to marinate. This step helps tenderize the meat and allows the flavors to penetrate deeply.
Step 3
In a separate bowl, prepare the sauce by mixing 3 Tbsp gochugaru, 4 Tbsp gochujang, 2 Tbsp minced garlic, 2 Tbsp oligodang, and 5 Tbsp mirin. Stir well until fully combined and set aside.
Step 4
Prepare the vegetables. Slice the onion thickly. Thinly slice the carrot and shiitake mushroom. Make sure to remove the tough stem from the shiitake mushrooms for a better texture.
Step 5
Drain the excess juice from the kimchi by gently pressing it, then shake off the filling. You’ll only be using the cabbage part. (If using kimchi made for gifting, the kind that’s just seasoned without much filling, that works perfectly too.)
Step 6
Heat 2 Tbsp of grapeseed oil in a pan over medium-high heat. Add the prepared kimchi and stir-fry until fragrant.
Step 7
Add the marinated pork to the pan. If the pieces are stuck together, separate them with your spatula. Stir-fry over high heat until the pork is no longer pink. It’s important to cook the pork quickly over high heat.
Step 8
Once the pork is partially cooked, add the stir-fried kimchi back into the pan with the pork and continue to cook together.
Step 9
If there’s too much liquid, let it simmer and reduce over high heat. Continue stir-frying until the pork and kimchi are well combined.
Step 10
Add all of the prepared sauce to the pan. Reduce the heat to medium-low and stir-fry gently until the sauce evenly coats all the ingredients. Be careful not to burn the sauce.
Step 11
Add all of the prepared vegetables (onion, carrot, shiitake mushroom, etc.) to the pan.
Step 12
Stir-fry quickly over high heat for a short time, just until the vegetables are tender-crisp. This ensures the vegetables retain their crunch and freshness, making the dish even more delicious.
Step 13
Serve the finished spicy stir-fried pork generously over a bowl of warm rice to make a delicious rice bowl! The spicy flavor will stimulate your appetite, making it a perfect ‘rice thief’.
