Main Ingredients- Boiled and prepared Petasites hybridus 600g
- Pork loin (for Japchae) 250g
- Green onion 1/2 stalk
Seasoning Ingredients- Minced garlic 1 tsp
- Sunflower oil 2 Tbsp
- Gochugaru (Korean chili flakes) 2 Tbsp
- Oyster sauce 1 Tbsp
- Soy sauce 2 Tbsp
- Oligodang (corn syrup) 1 Tbsp
- Black pepper 1 pinch
- Sesame oil 1 Tbsp
- Toasted sesame seeds 1 Tbsp
- Minced garlic 1 tsp
- Sunflower oil 2 Tbsp
- Gochugaru (Korean chili flakes) 2 Tbsp
- Oyster sauce 1 Tbsp
- Soy sauce 2 Tbsp
- Oligodang (corn syrup) 1 Tbsp
- Black pepper 1 pinch
- Sesame oil 1 Tbsp
- Toasted sesame seeds 1 Tbsp
Cooking Instructions
Step 1
Please refer to [Recipe ID: 6960796] for instructions on how to boil and prepare the Petasites hybridus. Remove the tough stems and use only the tender parts.
Step 2
It’s convenient to use pre-sliced pork loin for Japchae (Korean glass noodle stir-fry). If you have a whole cut, slice it thinly to about 0.3cm thickness.
Step 3
Cut the prepared Petasites hybridus into pieces approximately the same length as the pork loin, about 5-6cm long. Cutting them to a similar length ensures a pleasant texture when stir-fried together.
Step 4
Wash the green onion thoroughly and chop it finely, mixing both white and green parts. This adds a fragrant aroma to the dish.
Step 5
Heat sunflower oil (2 Tbsp) in a pan over medium-low heat. Add the chopped green onion and minced garlic (1 tsp) and stir-fry for about 30 seconds until fragrant. Be careful not to burn them.

Once the aromatics are fragrant, add the pork loin. Sprinkle with oyster sauce (1 Tbsp) and black pepper. Break up the pork slices so they don’t clump together, and stir-fry until the pork is mostly cooked through and has turned opaque.

When the pork is almost cooked, add the cut Petasites hybridus. Add gochugaru (2 Tbsp), soy sauce (2 Tbsp), and oligodang (1 Tbsp). Stir-fry everything together, ensuring the seasonings coat all the ingredients evenly.

Continue to stir-fry over medium heat for about 3-5 minutes, allowing the ingredients to cook through.
