Essential Ingredients

  • 500g Pork, thinly sliced for bulgogi (e.g., neck or front leg)
  • 2 Green onions, 20cm length each (approx. 150g)
  • 1/2 Onion (medium size)

Seasoning Ingredients

  • 1 Tbsp Sugar
  • 1.5 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Soy sauce
  • 1 Tbsp Cheongju (or cooking wine)
  • 1 Tbsp Minced garlic
  • 1/4 Tbsp Minced ginger (or a pinch of ginger powder)
  • 1/2 Tbsp Sesame oil
  • 1 Tbsp Corn syrup (for gloss and sweetness)
  • 3 Tbsp Gochujang (Korean chili paste)
  • Pinch of Black pepper

Cooking Instructions

Step 1

Wash the green onions thoroughly under running water. Using a knife or a julienne peeler, slice them into very thin strips. Soak the julienned green onions in cold water for about 10 minutes. This helps to maintain their crispness and reduce the pungent flavor. Make sure to thoroughly drain the water before using them in the dish.

Step 1

Step 2

Peel the onion, wash it, and then slice it into roughly 0.5cm thick strips. Slicing them too thinly might cause them to break apart during cooking, so aim for a moderate thickness.

Step 2

Step 3

In a small bowl, combine 1 Tbsp sugar, 1.5 Tbsp gochugaru, 1 Tbsp soy sauce, 1 Tbsp cheongju, 1 Tbsp minced garlic, 1/4 Tbsp minced ginger, 1/2 Tbsp sesame oil, 3 Tbsp gochujang, and a pinch of black pepper. Stir well until all the seasonings are evenly mixed, creating a flavorful sauce.

Step 3

Step 4

Place the pork slices in a large bowl. Add about half of the prepared sauce and gently mix with your hands, ensuring the pork is evenly coated. Massage the meat gently to help the seasoning penetrate. Once coated, add 1 Tbsp of corn syrup for extra gloss and sweetness, and mix lightly once more.

Step 4

Step 5

Heat a pan over medium-high heat with a little cooking oil. Add the marinated pork and begin to stir-fry. Keep stirring with chopsticks to prevent the pork slices from sticking together and to break up any clumps. Once the pork is mostly cooked, add the sliced onions and stir-fry for another 1-2 minutes until the onions become translucent.

Step 5

Step 6

Finally, drain the julienned green onions thoroughly after soaking them in cold water. Add them to the pan with the stir-fried pork. To maintain the crispness of the onions, stir everything together gently for about 30 seconds. Your delicious stir-fried pork is now ready to be enjoyed with a warm bowl of rice!
