While oyster mushrooms are typically stir-fried or seasoned simply with salt or soy sauce, this recipe offers a delightful twist. By coating them in a spicy and sweet sauce and stir-frying them until they’re almost grilled, you achieve a wonderfully unique flavor. If you love a good kick of spice, definitely give this a try. It’s a fantastic way to enjoy mushrooms with a new dimension of taste.
Ingredients- 2 packs (approx. 400g) Oyster mushrooms
- 4-5 Scallions
- 3 Korean green chilies (Cheongyang peppers)
Seasoning Sauce- 1 Tbsp Minced garlic
- 3 Tbsp Corn syrup (or rice syrup)
- 2 Tbsp Soy sauce
- 1 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp Sugar
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Sesame oil
- A pinch of Toasted sesame seeds
- 1 Tbsp Minced garlic
- 3 Tbsp Corn syrup (or rice syrup)
- 2 Tbsp Soy sauce
- 1 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp Sugar
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Sesame oil
- A pinch of Toasted sesame seeds
Cooking Instructions
Step 1
Oyster mushrooms shrink considerably when cooked, so using two packs will yield a generous portion. If you don’t have scallions, green parts of leeks or even green onions can be used as a substitute.
Step 2
Trim the very bottom ends of the oyster mushroom clusters. Just a small cut to remove any tough or dirty part is sufficient; avoid cutting too much, as this can cause the mushrooms to separate.
Step 3
Instead of separating each mushroom individually, leave them in natural clusters of 3-4 mushrooms. This helps maintain a better texture and bite.
Step 4
Finely mince the scallions and Korean green chilies. Wash them thoroughly before chopping. The green chilies add a spicy kick, so feel free to adjust the amount according to your preference.
Step 5
Heat a dry pan over medium-high heat. Add the prepared oyster mushroom clusters without any oil. Stir-fry them until they turn lightly golden brown. This step helps evaporate excess moisture and develops a richer flavor.
Step 6
In a small bowl, combine all the seasoning sauce ingredients: minced garlic, corn syrup, soy sauce, gochujang, sugar, gochugaru, sesame oil, and toasted sesame seeds. Mix them well until fully incorporated to create a flavorful sauce.
Step 7
Once the mushrooms are nicely browned, add the prepared seasoning sauce to the pan. Increase the heat to high and stir-fry quickly, ensuring the sauce coats the mushrooms evenly.
Step 8
As the sauce cooks with the mushrooms, moisture will be released, creating a bit of liquid. Continue to cook over high heat, stirring constantly, until this liquid has mostly evaporated and the sauce has thickened.
Step 9
The key to a delicious stir-fry is to reduce the sauce until it’s thick and clings beautifully to the mushrooms. Cook until the sauce is almost completely absorbed and the mushrooms appear glazed. This creates a concentrated flavor and a wonderfully chewy texture.
Step 10
Once the sauce has reduced and the mushrooms are glossy and have a satisfying chewy texture, turn off the heat. Serve immediately and enjoy this flavorful dish, especially with a bowl of hot rice!
