This stir-fried kimchi recipe, with its perfect balance of sour and sweet flavors, will make you devour a bowl of rice in no time. Made with simple ingredients, it delivers a deep umami taste that anyone can easily recreate.
Main Ingredients- 1/4 head of well-fermented napa cabbage kimchi (or 1 large piece)
- 1 stalk of green onion
- 1 ladleful of kimchi juice (approx. 50ml)
Seasoning- 1 Tbsp soy sauce
- 2 Tbsp oligosaccharide (or sugar)
- 1 Tbsp sesame oil
- A pinch of black pepper
- A sprinkle of sesame seeds

Cooking Instructions
Step 1
Cut the kimchi into bite-sized pieces. If it’s too sour, you can lightly rinse it under water before using. Reserve about a ladleful of the kimchi juice, as it adds a wonderful depth of flavor during cooking.
Step 2
Finely chop the green onion. Heat your pan over medium-low heat, add the chopped green onions and a generous amount of cooking oil (or sesame oil). Slowly cook the green onions until fragrant, infusing the oil with their aroma to create ‘green onion oil’. Be careful not to burn them.
Step 3
Once the green onion oil is fragrant, add the chopped kimchi to the pan and stir-fry it with the oil. Next, add 1 Tbsp soy sauce, a pinch of black pepper, and 2 Tbsp oligosaccharide. Mix well to combine the kimchi and seasonings.
Step 4
Reduce the heat to low and gently stir-fry the kimchi for about 5-7 minutes. This slow cooking process softens the kimchi, allows the flavors to meld, and balances the sourness with sweetness and umami. Ensure it doesn’t stick to the pan.
Step 5
When the kimchi is tender and well-cooked, drizzle in 1 Tbsp of sesame oil and sprinkle with sesame seeds. Give it a final quick stir to incorporate everything. Turn off the heat and serve in a dish. This delicious stir-fried kimchi is perfect served over a bowl of hot rice!
