- 100g Minced Pork (Use a leaner cut for a less greasy result)
- 3 Korean Green Chilies (Adjust to your spice preference; they add a nice kick)
- 3cm White part of Green Onion (Julienned)
Seasoning- 1 Tbsp Cooking Oil
- 1 Tbsp Soy Sauce (Adds umami and depth)
- 1 tsp Sugar (For sweetness and a glossy finish)
- 1 Tbsp Cooking Oil
- 1 Tbsp Soy Sauce (Adds umami and depth)
- 1 tsp Sugar (For sweetness and a glossy finish)
Cooking Instructions
Step 1
Wash the fresh garlic scapes thoroughly and trim them into approximately 5cm lengths. Cutting them to a manageable size will make the dish easier to eat.
Step 2
Remove the seeds from the Korean green chilies and mince them finely. Julienne the white part of the green onion for an added aromatic touch.
Step 3
Heat 1 tablespoon of cooking oil in a pan over medium heat. Add the minced pork and stir-fry until it turns white and is cooked through, rendering some of the fat.
Step 4
Once the pork is mostly cooked, add the julienned green onion and continue to stir-fry until fragrant, allowing the aromatic flavors of the onion to release.
Step 5
Pour 1 tablespoon of soy sauce along the edge of the pan; this allows it to caramelize slightly, adding a deeper flavor. Stir everything together to ensure the pork and green onion are evenly coated.
Step 6
When the pork is fully cooked, add the prepared garlic scapes to the pan. Increase the heat to high and stir-fry quickly to maintain their crisp texture. Be careful not to overcook them until they become mushy.
Step 7
Add the minced Korean green chilies and stir-fry together to incorporate their spicy flavor. The heat of the chilies complements the mild pungency of the garlic scapes.
Step 8
Finally, add 1 teaspoon of sugar and stir-fry rapidly to ensure all ingredients are evenly coated with the seasoning. The sugar will add a lovely glossy sheen to the dish.
Step 9
Once the ingredients are well-combined and have a appetizing color, turn off the heat. Transfer the finished stir-fried garlic scapes to a serving dish. Enjoy this dish with a bowl of warm rice for a perfect meal.
