Hello everyone! Today, I’m sharing a super easy recipe for stir-fried enoki mushrooms with a sweet and spicy Buldak sauce that’s perfect as a side dish for rice or as a snack with drinks. It’s not complicated at all, so just follow along! The wonderful combination of enoki mushrooms and the fiery kick of Buldak sauce is truly delightful. The more chili oil and Buldak sauce you add, the richer and more flavorful the dish becomes. (Measurements are based on a standard Korean soup spoon.)
Main Ingredients- 1 pack Enoki Mushrooms
- 2 Korean Green Chilies (Cheongyang peppers)
- A bit of Scallions or Green Onions, finely chopped
Spicy & Sweet Sauce (Korean soup spoon measurements)- 1.5 Tbsp Sugar
- 1 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Chili Oil
- 1 Tbsp Minced Garlic
- 4 Tbsp Buldak Sauce (adjust to your preference)

Cooking Instructions
Step 1
First, prepare the enoki mushrooms. Trim off the very bottom root part, then cut the mushrooms into 3-4 cm lengths. This helps them maintain their shape while cooking and results in a chewier texture.
Step 2
Now, let’s make the fantastic sauce! In a small bowl, combine 1.5 Tbsp sugar, 1 Tbsp gochujang, 3 Tbsp chili oil, 1 Tbsp minced garlic, and 4 Tbsp Buldak sauce. Mix them well. Using more chili oil and Buldak sauce will create a deeper, richer flavor.
Step 3
Heat a lightly oiled frying pan over medium heat. Add the prepared enoki mushrooms and stir-fry them until they turn lightly golden brown.
Step 4
Once the enoki mushrooms are partially cooked, pour the prepared sauce directly into the pan. Stir everything together to ensure the sauce evenly coats the mushrooms as it cooks.
Step 5
