Main Ingredients- 2/3 medium eggplant
- 2cm piece of green onion
Seasoning- 1 tsp red pepper flakes
- 1 tsp minced garlic
- 1 tsp soy sauce
- 1 tsp corn syrup (or other liquid sweetener)
- 1 tsp sesame oil
- 1 tsp sesame seeds

Cooking Instructions
Step 1
First, wash the eggplant thoroughly and cut it into bite-sized pieces. Cutting it into about 1-1.5cm thick slices will give it a nice texture and make it even more delicious.

Heat a generous amount of cooking oil in a pan over medium heat. Add the prepared eggplant and stir-fry until it becomes tender and slightly golden brown. The eggplant will absorb the oil and soften.

Once the eggplant is tender to your liking, add all the seasoning ingredients: red pepper flakes, minced garlic, soy sauce, corn syrup, and sesame oil. Also, add the finely chopped green onion.

Stir everything together quickly over high heat to ensure the eggplant and seasonings are evenly combined. Be careful not to burn the seasonings. Continue stir-frying for just 1-2 minutes.
