  • 1/2 onion
  • 1/2 stalk green onion
  • 10 perilla leaves
  • 10 whole garlic cloves
  • 1 pack enoki mushrooms

To remove any gaminess from the duck, marinate it with 2 tablespoons of cooking wine (like Cheongha or Soju) for about 10 minutes. It’s also beneficial to pat the duck dry with paper towels to remove excess blood for freshness.

Slice the onion into strips. Cut the green onion into large diagonal pieces. Wash the perilla leaves thoroughly under running water and pat them dry. Lightly smash the whole garlic cloves with the side of a knife. Trim the base of the enoki mushrooms and rinse them gently under running water. Feel free to add other vegetables you have on hand, such as chives, carrots, cabbage, or potatoes.

In a bowl, combine 2 tablespoons of gochujang, 2 tablespoons of soy sauce, 1 tablespoon of sugar, 1 tablespoon of oligodang, 1.5 tablespoons of minced garlic, 1 tablespoon of cooking wine (or mirin), and a pinch of black pepper. Mix well to create the sauce. If you prefer it spicier, you can add chili powder or chopped Cheongyang peppers.
