  • Oligosaccharide 1 Tbsp
  • Sugar 1 Tbsp
  • Gochugaru (Korean chili powder) 1 Tbsp
  • Gochujang (Korean chili paste) 1 Tbsp
  • Minced garlic 1 tsp
  • Mayonnaise, a little
  • Toasted sesame seeds, a little

Cooking Instructions

Step 1

While it’s delicious even when just mixed, stir-fried dried squid strips are undeniably tastier. Let’s get started on making them!

Step 1

Step 2

First, soak the dried squid strips (Jinmi-chae) in water for about 5 minutes to soften them. This step is key to achieving a tender and chewy texture. After soaking, drain them thoroughly in a sieve.

Step 2

Step 3

Cut the drained dried squid strips into bite-sized pieces. Now, let’s prepare the seasoning sauce. In a bowl, combine 1 Tbsp soy sauce, 1 Tbsp plum extract, 1 Tbsp oligosaccharide, 1 Tbsp sugar, 1 Tbsp gochugaru, 1 Tbsp gochujang, and 1 tsp minced garlic. Mix well until you have a smooth sauce.

Step 3

Step 4

Heat about 1 to 2 tablespoons of cooking oil in a pan over medium heat. Pour in the prepared seasoning sauce and bring it to a boil. Letting the sauce simmer helps to develop its flavors.

Step 4

Step 5

Once the sauce is bubbling, reduce the heat to low. Add the softened dried squid strips to the pan. Stir continuously to ensure the sauce coats the squid evenly. Cook, stirring gently, until the squid absorbs the sauce and becomes tender.

Step 5

Step 6

When the sauce has mostly coated the squid strips, turn the heat down to very low or briefly turn it off. Add a tablespoon or two of mayonnaise (adjust to your preference) and a sprinkle of toasted sesame seeds. Stir just enough to combine. Mayonnaise adds a wonderful creaminess and umami. Be careful not to overcook at this stage; just mix gently and remove from heat.

Step 6

Step 7

And there you have it! A delicious, spicy, sweet, and chewy stir-fried dried squid dish is ready. It’s perfect served over rice or as a lunchbox side dish. Enjoy your meal!
