My cooking philosophy is that side dishes made at home should always be as effortless, quick, and easy as possible. Plus, dealing with a mountain of dishes afterwards is such a chore! This recipe is the second in my series of simple dried seafood stir-fries, born from that very idea. It uses a ‘one-pot’ method where everything is tossed in together, but trust me, the result is surprisingly delicious. Don’t hesitate, just follow along! This is a technique even used by commercial side dish franchises, so it’s a great one to know. ^^
Main Ingredients- Dried shrimp 200g
- Korean green peppers (Ggachi-gochu) 100g
Flavorful Sauce- Soy sauce 6 Tbsp
- Corn syrup or rice syrup 6 Tbsp
- Sugar 6 Tbsp
- Cooking wine (Mirin, etc.) 6 Tbsp
- Minced garlic 1 Tbsp
- Cooking oil 6 Tbsp
- Salt, to taste

Cooking Instructions
Step 1
First, heat a dry pan over medium heat. Add the dried shrimp without any oil and stir-fry lightly. This process removes any fishy smell and enhances their nutty flavor. Once lightly toasted, transfer the shrimp to a sieve and shake to remove any dust or impurities.
Step 2
Wash the Korean green peppers thoroughly. If they are too long, cut them in half. For peppers you plan to keep whole, prick them a few times with a fork. This allows the sauce to penetrate better, making them much more flavorful.

Now, let’s begin the stir-frying process. Heat a generous amount of cooking oil in the pan and add the prepared Korean green peppers.

Season the peppers with a pinch of salt while stir-frying. It’s best to cook these over high heat and quickly. This helps maintain their crispness and prevents them from becoming too soft, keeping the dish visually appealing.

Now it’s time to create the delicious braising sauce. With the heat off, add 6 tablespoons of cooking oil and 6 tablespoons of soy sauce to the pan.

Next, add 1 tablespoon of minced garlic and 6 tablespoons of cooking wine according to the measured amounts. Mix these ingredients well to form the sauce base.

Finally, add 6 tablespoons of sugar and 6 tablespoons of corn syrup for sweetness. Stir everything together, then turn on the heat and bring the sauce to a boil.

Once the sauce begins to bubble vigorously, it’s the perfect moment to add the dried shrimp. Introducing the shrimp to a boiling sauce helps infuse them with deep flavor.
Step 9
Reduce the heat to medium-low, then add the dried shrimp. Quickly toss them to ensure they are evenly coated with the sauce. Be gentle to avoid breaking the shrimp as you mix.

Continue to stir-fry for about 1 to 2 minutes, until the sauce has fully coated the shrimp and a slight sheen of oil appears around the edges of the pan. This step gives the dish a beautiful glossy finish.

Finally, drizzle in 1 tablespoon of sesame oil for added nutty aroma, and add the stir-fried Korean green peppers.
