Easy and Delicious Jinmichae Bokkeum for a Perfect Side Dish ; )
I made stir-fried jinmichae using the dried shredded squid I had at home! This recipe offers a delightful chewy texture and a balanced sweet and spicy flavor, making it a staple side dish.
Main Ingredients- 400g dried shredded squid (Jinmichae)
Seasoning Sauce- 4 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Sugar
- 3 Tbsp Oligodang (corn syrup)
- 1.5 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Soy Sauce
- 1 Tbsp Minced Garlic
- 1.5 Tbsp Mayonnaise
- 3 Tbsp Water
- 4 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Sugar
- 3 Tbsp Oligodang (corn syrup)
- 1.5 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Soy Sauce
- 1 Tbsp Minced Garlic
- 1.5 Tbsp Mayonnaise
- 3 Tbsp Water
Cooking Instructions
Step 1
To achieve a tender texture, soak the dried shredded squid in cold or lukewarm water for about 3-5 minutes. This prevents it from becoming too tough and helps it absorb the sauce better. Make sure to squeeze out as much water as possible after soaking to avoid a watery stir-fry.
Step 2
Prepare the seasoning sauce by combining all the sauce ingredients in a bowl. Mix together the gochujang, sugar, oligodang, gochugaru, soy sauce, minced garlic, and water until well blended. The combination of sweeteners, chili paste, and chili flakes creates the signature spicy and sweet flavor, while soy sauce adds depth.
Step 3
Pour the prepared seasoning sauce into a pan and bring it to a simmer over medium heat. Once it starts bubbling, reduce the heat to low and let it simmer for 1-2 minutes until it thickens slightly. Pre-simmering the sauce intensifies its flavor.
Step 4
Add the well-squeezed dried shredded squid to the pan with the reduced sauce. Stir-fry evenly for about 2-3 minutes, ensuring the squid is well coated. Finally, add the mayonnaise and stir-fry for another minute. The mayonnaise adds a creamy texture and a subtle richness that makes it even more appealing, especially for children.
