The taste of stir-fried anchovies changes dramatically depending on the seasoning used, making it a versatile side dish that never gets boring. You can enjoy it mildly or spicy, though I usually prefer the milder flavors. However, today, I’ve stir-fried them with plenty of fresh peppers for a slightly spicy twist. It’s a delicious variation to enjoy once in a while! The addition of peppers makes these anchovies irresistible. The spicy flavor really stimulates the appetite, making you want to reach for them constantly. They’re also incredibly tasty when mixed with rice! Main Ingredients- 3 handfuls dried anchovies (choose small anchovies or stir-fry anchovies according to your preference)
- 4 Cheongyang peppers (you can add more if you like it spicier)
Seasoning Ingredients- 3 Tbsp olive oil (or cooking oil)
- 2 Tbsp raw sugar (adjust sweetness as desired)
- 3 Tbsp mirin (to remove fishy odor and add gloss)
- 3 Tbsp honey (for shine and a subtle sweetness)

Cooking Instructions
Step 1
First, remove any internal organs or tough parts from the anchovies. Then, without adding any oil to the pan, place the dried anchovies and stir-fry them over low heat. This process helps to remove any fishy smell and makes the anchovies more flavorful.
Step 2
Once the anchovies are sufficiently stir-fried and their moisture has evaporated, transfer them to a separate bowl. Wipe the pan clean.
Step 3
In the clean pan, add the olive oil, then add the stir-fried anchovies. Continue to stir-fry them together over medium-low heat. Be careful not to burn the anchovies, and stir-fry until they are lightly golden brown.
Step 4
Remove the stems from the Cheongyang peppers, then slice them thinly. If there are many seeds, the spiciness will be intensified, so remove them, rinse lightly under running water, and then thoroughly pat them dry with paper towels.
Step 5
Add the prepared seasoning ingredients (raw sugar, mirin, honey) sequentially to the stir-frying anchovies. Stir well to combine, ensuring the seasoning coats the anchovies evenly. Once the seasoning has penetrated the anchovies, add the sliced Cheongyang peppers and stir-fry quickly to finish. Avoid overcooking the peppers, as they can become mushy; add them towards the end.
Step 6
Transfer the well-stir-fried anchovies with peppers to a nice serving dish. Once cooled, store them in an airtight container to enjoy over time. Your delicious side dish is ready!
