  • 1 Tbsp red pepper flakes (Gochugaru)

First, select fresh Korean hot peppers. To easily remove the stems, gently twist them off at the tip. Then, soak the peppers in rice water for about 10 minutes to clean them thoroughly. Soaking in rice water helps remove any bitterness and makes them even fresher.

Lightly pat the washed peppers dry. Place them in a large bowl and add 3 tablespoons of all-purpose flour. Gently shake or toss the bowl to coat the peppers evenly with flour. Coating them with flour will give them a chewier texture after steaming.
