Main Ingredients
- 3 handfuls of fresh green chili peppers (approx. 300g)
- 1/3 carrot (approx. 30g)
- 3 Tbsp all-purpose flour

- 1 Tbsp toasted sesame seeds

- 1.5 Tbsp soup soy sauce (guk-ganjang)
- 1 Tbsp regular soy sauce (jin-ganjang)
- 0.5 Tbsp corn syrup or maltose
- 1 Tbsp minced garlic

Cooking Instructions
Step 1
First, prepare 3 handfuls of green chili peppers. Wash them thoroughly, perhaps using coarse salt or baking soda, and then drain them, but leave them slightly moist. This residual moisture is key for the flour to adhere well. Place the washed, slightly damp peppers into a resealable plastic bag.
Step 2
Add 3 tablespoons of all-purpose flour to the plastic bag containing the slightly damp green peppers. The flour will coat the peppers, helping to maintain their crisp texture during steaming.
Step 3
Twist the opening of the plastic bag to seal it tightly. Then, shake the bag vigorously up and down to ensure the flour evenly coats all the green peppers, similar to how you would coat ingredients for frying.
Step 4
Open the bag and check if the flour has coated the peppers evenly. If some areas are not covered, reseal the bag and shake again. This completes the initial preparation for steaming.
Step 5
Transfer the flour-coated green peppers to a microwave-safe dish or plate, spreading them out. You can leave the bag opening slightly ajar or open. Microwave for 5 minutes. For more even cooking, take them out halfway through (around 2-3 minutes) and flip the peppers. Cooking time may vary slightly depending on your microwave’s wattage.

Once the peppers are steamed, remove them from the microwave. Finely julienne 1/3 of a carrot and sprinkle it generously over the steamed peppers. The carrot adds a touch of sweetness and color to the dish.

Finely chop 2 scallions. In a bowl, combine the steamed peppers, julienned carrots, and chopped scallions. Add all the seasoning ingredients: 1 Tbsp gochugaru, 1.5 Tbsp soup soy sauce, 1 Tbsp regular soy sauce, 0.5 Tbsp corn syrup or maltose, and 1 Tbsp minced garlic. Gently mix everything together so the seasoning evenly coats the peppers and carrots.
Step 8
Finally, add 1 Tbsp toasted sesame seeds, 1 Tbsp sesame oil, and 0.5 Tbsp whole sesame seeds. Mix gently one last time. The nutty aroma of sesame will complete this delicious steamed green pepper side dish. Enjoy with a bowl of freshly cooked rice!
