How to Make Delicious Seasoned Amaranth with Gochujang
Let’s try making seasoned amaranth with a touch of gochujang. This simple yet flavorful dish is a perfect way to enjoy fresh greens.
Ingredients- Amaranth (Chingum Chae) 90g
- Coarse salt 0.5 Tbsp (for blanching)
Seasoning- Gochujang (Korean chili paste) 0.5 Tbsp
- Doenjang (Korean soybean paste) 0.3 Tbsp
- Sesame oil 1 Tbsp
- Sesame seeds 1 Tbsp
- Gochugaru (Korean chili flakes) 0.5 Tbsp
- Minced garlic 0.5 Tbsp
- Gochujang (Korean chili paste) 0.5 Tbsp
- Doenjang (Korean soybean paste) 0.3 Tbsp
- Sesame oil 1 Tbsp
- Sesame seeds 1 Tbsp
- Gochugaru (Korean chili flakes) 0.5 Tbsp
- Minced garlic 0.5 Tbsp
Cooking Instructions
Step 1
First, you only need to prepare the fresh amaranth. Choosing good quality amaranth with a fragrant aroma is key.
Step 2
While amaranth is generally tender, trim and remove any thick or tough stem parts that would be difficult to eat. They can remain fibrous even after seasoning. After trimming, wash the amaranth thoroughly under running water multiple times to ensure no dirt or debris remains. This step is crucial for cleanliness.
Step 3
Bring a pot of water to a boil and add 0.5 Tbsp of coarse salt. Once the water is rapidly boiling, add the prepared amaranth and blanch it for just about 30 seconds. Blanching for too long can make the greens mushy and dull their color. Immediately after blanching, drain the amaranth and rinse it under cold running water to cool it down. Gently squeeze out about 80% of the water; pressing out all the water can make the greens dry and tough, so be mindful. Now, add 0.5 Tbsp of minced garlic and 0.5 Tbsp of gochujang to the amaranth.
Step 4
Next, add 0.3 Tbsp of doenjang, 0.5 Tbsp of gochugaru, 1 Tbsp of nutty sesame oil, and 1 Tbsp of sesame seeds. Gently toss and mix everything with your fingertips until the seasoning is evenly distributed throughout the amaranth. The trick here is to mix gently to avoid mashing the leaves. Once the seasoning is well combined and the flavors have melded, your delicious seasoned amaranth is ready! Plate it immediately and enjoy.
