This is a Sausage and Bean Sprout Stew recipe inspired by Chef Baek Jong-won, perfect for a quick and delicious home-cooked meal.
Main Ingredients- Bean sprouts 300g (washed thoroughly)
- Sausages 260g (choose your favorite kind)
- Onion 1/2 (thinly sliced)
- Green onion 1 handful (sliced diagonally)
- Water (enough to cover sausages)
- Cornstarch 1 Tbsp
- Water 2 Tbsp (for cornstarch slurry)
- Sesame oil a little
- Sesame seeds a little
Seasoning- Gochujang (Korean chili paste) 2 Tbsp
- Gochugaru (Korean chili flakes) 1 Tbsp
- Sugar 1 Tbsp
- Soy sauce 2 Tbsp
- Minced garlic 1 Tbsp

Cooking Instructions
Step 1
First, let’s prepare the seasoning sauce, which is the key to a delicious stew. In a bowl, combine Gochujang (2 Tbsp), Gochugaru (1 Tbsp), Sugar (1 Tbsp), Soy sauce (2 Tbsp), and Minced garlic (1 Tbsp). Mix them thoroughly. This sauce will add rich umami to your dish.
Step 2
Today, I’m using 260g of large roast Vienna sausages. Feel free to adjust the type and amount of sausages according to your preference.
Step 3
Slice the sausages diagonally into bite-sized pieces. This shape allows the sauce to penetrate better, making them even more flavorful.
Step 4
Thinly slice half an onion and diagonally slice the green onion. These will add freshness and aroma to the dish.
Step 5
Now, place the sliced sausages in a pot and add just enough water to partially cover them. Bring this to a boil over high heat. Boiling the sausages will release their delicious juices, creating a flavorful broth base. This step is the secret to a tasty sausage broth!
Step 6
Once the broth comes to a boil, add about 1/3 of the prepared seasoning sauce. Let the sausages simmer in this sauce first to absorb the flavors. This initial simmering helps the sauce cling better to the sausages.

After the sausages have absorbed some flavor, add the thoroughly washed bean sprouts (300g) and the sliced onions to the pot. Don’t worry if the bean sprouts seem like a lot; they will wilt down significantly as they cook.
Step 8
After adding the bean sprouts and onions, evenly spoon the remaining seasoning sauce over them. Ensure the sauce is distributed well.
Step 9
Now, cover the pot and simmer over medium heat for about 5 minutes. It’s crucial not to open the lid frequently while cooking the bean sprouts, as this can cause them to lose their crispness and develop an unpleasant smell. Keeping the lid on traps the steam and helps them cook evenly.
Step 10
After simmering for about 5 minutes, add the prepared green onions. Their fresh aroma will further enhance the dish.
Step 11
To achieve that desirable thick, stew-like consistency, we’ll make a cornstarch slurry. In a small bowl, mix 1 Tbsp of cornstarch with 2 Tbsp of water until smooth and lump-free. Drizzle this slurry evenly into the pot and stir well. This will thicken the stew beautifully.

Finally, drizzle in a little sesame oil for a nutty aroma and rich flavor.
