We’ve created Bibimguksu using chewy rice noodles, perfect for special occasions or when you’re craving something delicious. The delightful combination of springy noodles, a sweet and spicy sauce, and fresh vegetables is simply divine. Enjoy an even more fulfilling meal by pairing it with shrimp patties. This detailed recipe is designed for beginners to follow with ease.
Noodle Ingredients- 3 servings Rice Noodles (Somyeon)
- 1 handful King Oyster Mushrooms (approx. 50g)
- 1 handful Carrots (approx. 50g)
- 1/4 Onion (approx. 50g)
Spicy & Sweet Bibim Sauce- 3 Tbsp Soy Sauce
- 3 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Gochugaru (Korean chili flakes)
- 2 tsp Sugar (or white sugar)
- 2 Tbsp Vinegar
- 2 Tbsp Sesame Oil
- A pinch of Sesame Seeds
- 2 Tbsp Minced Garlic
- 3 Tbsp Soy Sauce
- 3 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Gochugaru (Korean chili flakes)
- 2 tsp Sugar (or white sugar)
- 2 Tbsp Vinegar
- 2 Tbsp Sesame Oil
- A pinch of Sesame Seeds
- 2 Tbsp Minced Garlic
Cooking Instructions
Step 1
First, prepare the bibim sauce that will define the flavor of your Bibimguksu. In a bowl, combine 3 Tbsp soy sauce, 3 Tbsp gochujang, 3 Tbsp gochugaru, 2 tsp sugar, 2 Tbsp minced garlic, 2 Tbsp vinegar, and 2 Tbsp sesame oil. Mix well until the sugar dissolves. Making the sauce in advance and letting it sit allows the flavors to meld beautifully. Set aside the sesame seeds for garnishing later.
Step 2
Next, prepare the fresh vegetables. Trim the base of the king oyster mushrooms and shred them into bite-sized pieces. Wash, peel, and thinly julienne the carrots and onion. Feel free to add other vegetables you have on hand, like cucumber or lettuce.
Step 3
Lightly oil a pan over medium-low heat. Add the shredded king oyster mushrooms, carrots, and onion. Sauté for about 1-2 minutes until they are slightly softened but still retain some crunch. Avoid overcooking, as this will diminish their crisp texture.
Step 4
Now it’s time to cook the rice noodles. Bring a large pot of water to a rolling boil over high heat. Once boiling, add the rice noodles, ensuring they don’t stick together by stirring them gently. Rice noodles can become mushy if overcooked or clumped.
Step 5
Cook the rice noodles according to the package instructions, typically around 4 minutes and 30 seconds, for a perfectly chewy texture. To achieve an even chewier noodle, add a cup of cold water to the boiling pot when it starts to boil over, and repeat this process 2-3 times. This helps control the cooking temperature and texture.
Step 6
Once the noodles are cooked, immediately rinse them under cold running water. This step removes excess starch and cools the noodles, enhancing their chewy texture. Rinse thoroughly until the noodles are completely cooled.
Step 7
Gently rub the cooled noodles between your hands to remove as much water as possible. Draining them well is crucial for the sauce to coat the noodles evenly without making them soggy. It’s best to drain them in a colander.

Pour the prepared spicy and sweet bibim sauce generously over the drained rice noodles. Gently toss and mix the noodles with the sauce until well coated.

Add the sautéed king oyster mushrooms, carrots, and onion to the noodles. Mix everything together gently, ensuring the vegetables are evenly distributed.

Finally, drizzle in the sesame oil and vinegar for added flavor and aroma. Be mindful not to add too much, as it can overpower the dish. Mix gently one last time.

Prepare the garnish. Thinly slice the fresh cabbage. Its crispness will add a delightful contrast to the Bibimguksu.

Let’s make the shrimp patties. Crack 2 eggs into a bowl, finely chop 1/2 green onion, and whisk them together. (Optional: you can add a little pancake mix or flour to adjust the batter consistency.)

Finely chop the white part of the sliced cabbage and add it to the egg mixture. This adds a subtle sweetness to the patties.

Rinse the shrimp meat thoroughly. If using frozen shrimp, thaw them and pat dry. Add the cleaned shrimp to the egg mixture and combine well.

Heat a generous amount of cooking oil in a pan over medium heat. Pour the shrimp and egg mixture into the pan and cook until golden brown on both sides. Ensure the shrimp is fully cooked and the egg is set. Thick patties are also delicious!
