Main Ingredients

  • Pork (for stew) 300g
  • Potatoes 3 pcs
  • Zucchini 1 pc
  • Green onion 10cm
  • Cheongyang chili peppers 3 pcs
  • Onion 1/2 pc
  • Water 1000ml (5 cups)

Seasoning Ingredients

  • Gochugaru (Korean chili powder) 2 Tbsp
  • Gochujang (Korean chili paste) 2 Tbsp
  • Sesame oil 1.5 Tbsp
  • Minced garlic 1 Tbsp
  • Soy sauce for soup (Guk-ganjang) 1.5 Tbsp
  • Sugar 0.5 Tbsp
  • Dashida (or MSG) 0.5 Tbsp
  • Salted shrimp (saeujeot) 0.5 Tbsp (including brine)

Cooking Instructions

Step 1

First, prepare the vegetables. Peel or wash the potatoes, zucchini, and onion thoroughly. Cut them into bite-sized cubes. It’s good to cut them to a size similar to the pork pieces. Finely chop the Cheongyang chili peppers and green onions to add a fresh aroma to the stew.

Step 1

Step 2

In a deep pot or wok, add 1.5 Tbsp of sesame oil and stir-fry the pork over high heat. If you don’t have sesame oil, you can use cooking oil, but the nutty flavor of sesame oil will enhance the stew’s taste.

Step 2

Step 3

Once the pork’s surface is cooked, add 1 Tbsp of minced garlic and stir-fry together until fragrant. When the garlic aroma rises, you are ready for the next step.

Step 3

Step 4

When the pork is somewhat cooked, add 2 Tbsp of gochugaru and stir-fry with the pork. Be careful not to burn the chili powder by using high heat; it’s important to stir-fry over medium-low heat to prevent burning. The gochugaru will blend with the oil, adding color and flavor.

Step 4

Step 5

While stir-frying with the gochugaru, add the chopped onion and Cheongyang chili peppers. Stir-fry them briefly until they become translucent. The sweetness of the vegetables and the spiciness will combine with the pork, adding depth to the stew.

Step 5

Step 6

Now, add 2 Tbsp of gochujang, the key ingredient for the stew, and stir-fry until well combined with all the ingredients. Be mindful not to burn the gochujang over high heat; stir-fry it slowly over low heat to preserve its flavor.

Step 6

Step 7

Once the gochujang mixture is well incorporated, pour in 1000ml (5 cups) of water. This recipe is for a stew with ample broth rather than a thick stew (jjigae), so ensure you add enough water. Bring it to a boil over high heat.

Step 7

Step 8

Once the stew starts boiling, reduce the heat to medium and season with 1.5 Tbsp of soy sauce for soup, 0.5 Tbsp of sugar, 0.5 Tbsp of salted shrimp (with brine), and 0.5 Tbsp of Dashida. The stew might taste a bit bland initially, but after simmering for about 15 minutes, the flavors will meld, and the seasoning will become just right. Taste after simmering and add more salt or soy sauce if needed.

Step 8

Step 9

After adjusting the seasoning, add the chopped green onions and boil for another moment. The longer you simmer, the more the flavors of the ingredients will infuse into the broth, making it even tastier. Simmering for over 15 minutes is recommended for a richer taste.

Step 9

Step 10

Your delicious Pork Gochujang Stew, with its spicy and sweet broth, is now ready! The spicy kick combined with the savory sweetness of gochujang and tender pork and vegetables creates a fantastic harmony, making it a magical stew that will have you finishing your rice bowl in no time. Enjoy your meal!
