Baek Jong-won Style Thin Pork Belly Duruchigi: A Recipe for Pork Bulgogi Using Frozen Pork Belly
A delightful dish featuring chewy frozen pork belly topped generously with a sweet and tangy green onion salad. It’s a true rice thief! If you have any leftovers, you can also make delicious fried rice with the remaining meat and sauce.
Main Ingredients- 500g frozen pork belly
- 300g fresh green onion, julienned
- 110g cabbage
- 50g garlic cloves
- A pinch of sesame seeds
Soy Sauce Base for Duruchigi- 60g regular soy sauce (approx. 4 Tbsp)
- 100g mirin (approx. 1/2 cup)
- 100g water (approx. 1/2 cup)
- 10g brown sugar (approx. 1 Tbsp)
Spicy and Tangy Green Onion Sauce- 1.5 Tbsp gochujang (Korean chili paste) (30g)
- 5 Tbsp gochugaru (Korean chili flakes) (20g)
- 4 Tbsp vinegar (22g)
- 3 Tbsp water (25g)
- 1.5 Tbsp brown sugar (12g)
- 2 Tbsp sesame oil (10g)
- 60g regular soy sauce (approx. 4 Tbsp)

Cooking Instructions
Step 1
First, let’s prepare the sweet and savory soy sauce base for the duruchigi. In a bowl, combine 60g of regular soy sauce, 100g of mirin, 100g of water, and 10g of brown sugar. Stir well until the sugar is completely dissolved.
Step 2
Next, we’ll make the spicy and tangy green onion sauce. In a large bowl, add 1.5 Tbsp of gochujang.
Step 3
Add 5 Tbsp of gochugaru. You can use a mix of fine and coarse gochugaru for a cleaner taste and better texture.
Step 4
Add 4 Tbsp of vinegar for a zesty kick. Rice vinegar or brown rice vinegar works well.
Step 5
Add 3 Tbsp of water to adjust the consistency of the sauce.

Add 1.5 Tbsp of brown sugar for a touch of sweetness.

Finally, add 2 Tbsp of sesame oil for a nutty aroma.

Combine all the green onion sauce ingredients in the bowl and mix them thoroughly with a spoon or whisk until smooth and well combined. This is the base for your delicious green onion salad.

Julienne the cabbage into thin strips, about 0.5 cm thick. This adds a pleasant texture to the dish.

You can use whole garlic cloves, or if they are too large, slice them thinly into pieces for better cooking distribution.

In a large bowl, combine the julienned green onions and cabbage. Pour the prepared green onion sauce over them and gently toss with your hands until everything is evenly coated with the sauce.

Now, let’s start stir-frying the pork belly. Place the frozen pork belly in a pot or deep pan, breaking it apart as needed. Add the whole garlic cloves as well.

Turn the heat to medium and stir-fry the pork belly and garlic, allowing the pork fat to render. Cook for about 3-5 minutes, or until the pink color of the meat has mostly disappeared and the surface is cooked. Be careful not to overcook, as it can make the pork tough.

Once the pork belly is mostly cooked, reduce the heat to medium-low. Now, add all the dressed green onion mixture on top of the pork belly.

Using a spatula or chopsticks, gently mix the pork belly with the green onions and cabbage. It’s important to stir-fry gently so the green onions wilt and the sauce evenly coats everything.

Continue to cook over medium-low heat for about 5-7 minutes, allowing the green onions to soften completely and the soy sauce base to thicken and coat the ingredients. Once the sauce is reduced and glossy, your delicious duruchigi is ready! Sprinkle with toasted sesame seeds for a final touch.
