Dumplings are always delicious no matter how you prepare them! This time, I’ve made Bibim Mandu (mixed dumplings) with fresh vegetables that the whole family can enjoy. It’s a delightful dish combining crispy fried dumplings with a vibrant, flavorful vegetable salad.

Dressing Ingredients
  • Sugar 1 Tbsp
  • Gochugaru (Korean chili flakes) 1 Tbsp
  • Minced garlic 1 Tbsp
  • Sesame oil 1 Tbsp
  • Maesilcheong (plum extract) 3 Tbsp
  • Soy sauce 1 Tbsp
  • Gochujang (Korean chili paste) 1 Tbsp
  • Toasted sesame seeds 1 Tbsp

Cooking Instructions

Step 1

First, let’s prepare the fresh vegetables that will add vibrancy to our Bibim Mandu. Remove the core from the cabbage and shred it coarsely. Wash the lettuce leaves thoroughly, pat them dry, and then tear them into bite-sized pieces. Trim the ends of the cucumber, cut it in half lengthwise, optionally scoop out the seeds, and then slice it thinly into strips. It’s important to wash all vegetables thoroughly under running water and ensure they are well-drained.

Step 2

Now it’s time to cook the dumplings to perfection! Arrange the frozen dumplings in a single layer in your air fryer basket, making sure they don’t overlap. Place them in a preheated air fryer set to 180°C (350°F) and cook for about 15 minutes. The cooking time may vary slightly depending on the size of your dumplings and your specific air fryer model, so check halfway through to ensure they are golden brown and crispy.

Step 3

Next, we’ll finely shred the vegetables to enhance the texture of the Bibim Mandu. Shred the prepared cabbage, lettuce, and cucumber into thin strips. This makes it easier for the dressing to coat everything evenly and makes the dish easier to eat. Using a mandoline slicer or a sharp knife will help you achieve uniform thinness.

Step 4

Let’s make the delicious Bibim dressing! In a bowl, combine 1 Tbsp sugar, 1 Tbsp gochugaru, 1 Tbsp minced garlic, 1 Tbsp sesame oil, 3 Tbsp maesilcheong, 1 Tbsp soy sauce, 1 Tbsp gochujang, and 1 Tbsp toasted sesame seeds. Stir everything together until well combined to create a flavorful dressing.

Step 5

If you prefer a milder version for children or those who don’t like spicy food, you can reduce or omit the gochujang and add a little more maesilcheong or corn syrup. If you desire a spicier kick, feel free to add an extra tablespoon of gochujang for a more robust heat.

Step 6

Carefully remove the perfectly golden and crispy dumplings from the air fryer and arrange them attractively on a serving plate. The sight and aroma of the warm, freshly fried dumplings are sure to whet your appetite! Now, we’re ready to mix them with the fresh vegetables.

Step 7

In a large mixing bowl, combine the shredded vegetables and the cooked dumplings. Drizzle the prepared Bibim dressing over the mixture. Gently toss everything together until the vegetables and dumplings are evenly coated with the dressing. This delightful combination of crisp, fresh vegetables and warm, crunchy dumplings creates a wonderful and satisfying meal for everyone to enjoy!
