Ingredients

  • 4 sheets of square fish cakes (eomuk)
  • 1 stalk of green onion
  • 4 Cheongyang peppers (or other spicy green chilies)
  • 1/2 onion
  • 1 Tbsp minced garlic
  • 1.5 Tbsp soy sauce
  • 1.5 Tbsp sugar
  • 1.5 Tbsp gochugaru (Korean chili powder)
  • 10 twists of black pepper
  • Sesame seeds, for garnish
  • 3 swirls of cooking oil (approx. 3 Tbsp)

Cooking Instructions

Step 1

Cut the square fish cakes into 3 equal pieces, then cut each piece in half horizontally. This makes them easier to eat and helps the sauce absorb better.

Step 1

Step 2

Chop the green onion into bite-sized pieces. Finely chop the Cheongyang peppers as well, ready to add a spicy kick.

Step 2

Step 3

Wash the onion thoroughly and slice it into thin strips. The onion’s natural sweetness will add depth to the dish.

Step 3

Step 4

Heat a pan over high heat. Add the chopped green onions without any oil and stir-fry them. This process draws out their subtle sweetness and aroma.

Step 4

Step 5

Once the green onions start to turn lightly golden, add the chopped Cheongyang peppers and stir-fry them together. You’ll start to smell their spicy fragrance.

Step 5

Step 6

Now, add about 3 swirls (approximately 3 tablespoons) of cooking oil to the pan. Sauté the green onions and Cheongyang peppers in the oil until they are nicely browned and fragrant. Cooking them in oil enhances their flavor.

Step 6

Step 7

When the green onions and peppers are nicely browned, reduce the heat to medium. Add 1 tablespoon of minced garlic and stir-fry quickly to coat the ingredients, being careful not to burn the garlic.

Step 7

Step 8

As soon as the garlic turns slightly brown, reduce the heat to very low or turn it off momentarily. Add 1.5 tablespoons of gochugaru (Korean chili powder) and stir well to combine, ensuring the chili powder doesn’t burn. Stir-fry gently to coat everything with the spicy flavor.

Step 8

Step 9

Pour 1.5 tablespoons of soy sauce along the edges of the pan. Let it sizzle and caramelize slightly from the residual heat to add a deeper flavor. Then, add 1.5 tablespoons of sugar and stir until it completely dissolves, mixing it well.

Step 9

Step 10

Add the prepared fish cakes to the pan. Stir everything together and continue to stir-fry over medium heat until the fish cakes are well coated with the sauce. It’s important to keep stirring so the sauce distributes evenly.

Step 10

Step 11

Once all the ingredients are well mixed with the sauce, it’s time for the final touches. Sprinkle 10 twists of black pepper and drizzle 1 tablespoon of sesame oil. Stir-fry gently over low heat for another moment. This adds a wonderful nutty aroma.

Step 11

Step 12

Spread the stir-fried fish cakes out evenly in the pan.

Step 12

Step 13

Cover the pan with a lid and let it steam for about 1 minute. This steaming process allows the flavors to meld and the fish cakes to become even more tender.

Step 13

Step 14

Open the lid and stir gently with a spatula. You’ll see a beautiful glossy finish on the fish cakes.

Step 14

Step 15

Your “Jeyuk-style” stir-fried fish cakes, which taste remarkably like jeyuk bokkeum, are now complete! Guaranteed to make you finish a bowl of rice in no time!

Step 15

Step 16

On a serving plate, arrange the thinly sliced raw onion at the bottom. This will add a refreshing crunch and crisp flavor to your meal.
