- Small amount of Carrot (approx. 1/4)
- 1/2 King Oyster Mushroom
- 3 Cheongyang peppers (adjust to spice preference)
- 1 cup Scallions (cut into long strips)
Cooking Instructions
Step 1
First, prepare the vegetables for your Jeyuk Bokkeum. While you can use any vegetables you have on hand, it’s common to include half an onion, thinly sliced or roughly chopped. Add about a quarter of a carrot, thinly julienned, and half a king oyster mushroom, sliced into bite-sized pieces. For extra spice, thinly slice 3 Cheongyang peppers. (If you prefer less heat, remove the seeds or use fewer peppers.) Adding enoki mushrooms can enhance the texture. If you’re aiming for a Kimchi Jeyuk Bokkeum, it’s generally recommended to use fresh kimchi rather than aged, sour kimchi.
Step 2
Now, let’s make the delicious sauce for your Jeyuk Bokkeum! In a bowl, combine 2 tablespoons of soy sauce, 2 tablespoons of gochugaru, 1 tablespoon of minced garlic, a pinch of grated ginger (optional), 1 tablespoon of sugar, 2 tablespoons of gochujang, and 100ml of water. Stir well until all the ingredients are thoroughly mixed. This sauce will be used for the majority of the cooking, with additional seasonings added later.

Heat a wok or a deep skillet over high heat. Add the julienned scallions and stir-fry until fragrant, creating ‘scallion oil’. Once the aroma of the scallions is released, add the pork shoulder/butt (make sure to drain any excess liquid, using paper towels if needed to reduce gamey odors) and stir-fry over high heat until the surface is cooked.
Step 4
As the pork begins to change color and cook through, add 1 tablespoon of sugar to the pan and stir-fry with the pork until the sugar dissolves and coats the meat. After the sugar has coated the pork, pour in the pre-mixed sauce and continue to stir-fry over high heat.

Reduce the heat to medium and stir-fry to ensure the sauce evenly coats the pork and vegetables. At this stage, add another 1 tablespoon of gochugaru for a richer color and stir quickly. Add the remaining prepared vegetables like onion, carrot, mushrooms, and Cheongyang peppers. Stir-fry everything together over high heat for another minute or two until the vegetables are slightly softened. Your Jeyuk Bokkeum is now about 80% complete!

Finally, continue to cook until the sauce has slightly reduced and thickened to your liking. Just before turning off the heat, drizzle in 1 tablespoon of sesame oil and sprinkle with 1 tablespoon of toasted sesame seeds. Give it a final toss, and your glossy, flavorful Jeyuk Bokkeum is ready! If you are sensitive to gamey odors, consider adding 2 tablespoons of cooking wine (like mirin or sake) to the sauce mixture to further eliminate any unwanted smells.
