Main Ingredients

  • 562g Pork Shoulder for Grilling
  • 1 Onion
  • 1 Green Onion (Scallion)
  • A portion of Carrot
  • 1 Korean Hot Pepper (Cheongyang Pepper)

Marinade Ingredients

  • 3 Tbsp Gochujang (Korean chili paste)
  • 3 Tbsp Soy Sauce
  • 1.5 Tbsp Gochugaru (Korean chili flakes)
  • 3 Tbsp Brown Sugar
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Rice Syrup (or Plum Extract)
  • 3 Tbsp Cooking Wine (Mirin or similar)
  • A pinch of Black Pepper

Cooking Instructions

Step 1

First, prepare the vegetables that will add flavor and texture to your delicious Gochujang Bulgogi. Slice the onion into thick strips, and cut the carrot into similar-sized pieces. Slice the green onion diagonally, and finely chop the Korean hot pepper after removing the seeds for an extra spicy kick. (If you prefer less heat, you can adjust the amount of hot pepper or omit it.)

Step 1

Step 2

Pat the pork shoulder slices dry with paper towels to remove excess moisture. Then, cut the pork into bite-sized pieces (about 3-4 cm) and place them in a frying pan. (You can trim off excess fatty parts for a leaner dish.)

Step 2

Step 3

Now, let’s make the flavorful marinade. In a bowl, combine 3 Tbsp Gochujang, 3 Tbsp Soy Sauce, 1.5 Tbsp Gochugaru, 3 Tbsp Brown Sugar, 1 Tbsp Minced Garlic, 2 Tbsp Rice Syrup, 3 Tbsp Cooking Wine, and a pinch of Black Pepper. (Adjust the sweetness by changing the amount of sugar or rice syrup, and control the spiciness with Gochujang and Gochugaru.)

Step 3

Step 4

Pour the prepared marinade over the pork in the frying pan. Put on a pair of disposable vinyl gloves and gently mix the pork and marinade together, ensuring the sauce coats every piece evenly. Marinating the pork this way will make it even more tender and delicious.

Step 4

Step 5

Add all the prepared vegetables to the pan with the marinated pork.

Step 5

Step 6

Again, wearing gloves, gently mix the pork and vegetables with the marinade until everything is well combined. It’s important that all ingredients are evenly coated with the sauce.

Step 6

Step 7

Now, place the frying pan over medium heat. Once the pork starts to cook and turn red, stir and cook with chopsticks or a spatula, making sure to scrape the bottom of the pan. Cook until the pork is fully done, being careful not to burn it. This is the key step for perfectly cooked bulgogi.

Step 7

Step 8

Once the pork is cooked through, reduce the heat to low. Sprinkle with sesame seeds for a nice finish. Stir-fry for another moment, and your spicy and sweet Gochujang Pork Bulgogi is ready! Serve it hot over steamed rice for a delightful meal.
