Pork Bulgogi Ingredients

  • Pork shoulder or neck meat 300g (thinly sliced)
  • Minced garlic 1 Tbsp
  • Gochugaru (Korean chili flakes) 1 Tbsp
  • Gochujang (Korean chili paste) 1 Tbsp
  • Ground black pepper 1/2 tsp (or to taste)

First, thinly slice 300g of pork, similar to how it’s prepared for bulgogi. You can ask your butcher to slice it thinly, or slice it yourself at home for better marinade penetration and flavor.

In a bowl, combine the thinly sliced pork with 1 tablespoon of minced garlic. Gently mix and massage the garlic into the meat. Let it sit for about 10 minutes to allow the garlic flavor to infuse and to help tenderize the pork while removing any gamey odors.

Now, let’s add the spicy and sweet marinade. Add 1 tablespoon of gochugaru (Korean chili flakes), 1 tablespoon of gochujang (Korean chili paste), and about 1/2 teaspoon of ground black pepper.
