Main Ingredients- Anchovies 200g (adjust nut and anchovy types to your preference)
- Vegetable oil 4 Tbsp
- Ground pepper 1/2 tsp (optional)
- Whole garlic cloves 1 handful (about 10-15 cloves, can be sliced thinly)
- Walnuts 3 handfuls (adds a nutty flavor)
Cooking Instructions
Step 1
First, to remove any fishy smell from the anchovies, heat 2 Tbsp of vegetable oil in a pan over low heat. Add the anchovies and stir-fry until they are lightly golden brown. Be careful not to burn them; stir-frying them until crispy will make them tastier. Transfer the fried anchovies to a paper towel to absorb excess oil. If you dislike the fishy taste, you can remove the heads and guts of the anchovies before frying.
Step 2
In the same pan, add the remaining 2 Tbsp of vegetable oil. Add the whole garlic cloves and walnuts and cook slowly over low heat. Stir the garlic occasionally to prevent burning, cooking it until it’s lightly browned and fragrant. Lightly toasting the walnuts will enhance their nutty flavor. Set aside the cooked garlic and walnuts on a separate plate.
Step 3
Now, let’s make the delicious gochujang sauce. In the empty pan, combine 5 Tbsp of gochujang, 1/2 Tbsp of minced garlic, 1 Tbsp of crushed sesame seeds, 1/2 Tbsp of gochugaru, 2 Tbsp of rice syrup (or corn syrup), 2 Tbsp of oligosaccharide, and 1 Tbsp of brewed soy sauce. Mix them thoroughly until well combined. Turn the heat to low and stir-fry the mixture for about 1-2 minutes, being careful not to burn the gochujang and gochugaru, to release their aroma. It’s important to keep stirring to prevent sticking.
Step 4
Once the sauce is nicely stir-fried, add the previously fried anchovies, garlic, and walnuts to the pan. Mix everything together quickly until the sauce evenly coats all the ingredients. Gently toss to coat the ingredients with the sauce. Once done, let it cool slightly, then store in an airtight container in the refrigerator. This will keep it fresh for future meals.
