Main Ingredients- Dried shredded squids (Jinmi-chae) 200g
Golden Ratio Seasoning Sauce- Mayonnaise 2 tsp
- Gochujang (Korean chili paste) 2 tsp
- Gochugaru (Korean chili powder) 1 tsp
- Soy sauce 1.5 tsp
- Minced garlic 0.5 tsp
- Oligodang (corn syrup) 1 tsp (or 1 tsp sugar)
- Water 4 tsp
Finishing Touches for Aroma- Sesame oil 1 tsp
- Toasted sesame seeds 0.5 tsp
- Mayonnaise 2 tsp
- Gochujang (Korean chili paste) 2 tsp
- Gochugaru (Korean chili powder) 1 tsp
- Soy sauce 1.5 tsp
- Minced garlic 0.5 tsp
- Oligodang (corn syrup) 1 tsp (or 1 tsp sugar)
- Water 4 tsp

Cooking Instructions
Step 1
First, prepare 200g of dried shredded squids (Jinmi-chae). Cut them into bite-sized pieces, about 5-7 cm long. Instead of using scissors, tearing them by hand creates a rougher texture, allowing the sauce to penetrate better and enhancing the chewiness. Rinse the cut Jinmi-chae 2-3 times in cold or lukewarm water to remove any impurities, then drain thoroughly in a colander. Once the excess water is removed, add 2 tsp of mayonnaise to the Jinmi-chae and gently mix with your hands until evenly coated. Pre-mixing with mayonnaise helps prevent the Jinmi-chae from becoming tough and ensures a moist, tender texture.
Step 2
Now, let’s make the delicious golden ratio seasoning sauce. In a bowl, combine 2 tsp mayonnaise, 2 tsp gochujang, 1 tsp gochugaru, 1.5 tsp soy sauce, 0.5 tsp minced garlic, and 1 tsp oligodang (or 1 tsp sugar) for sweetness. Mix everything thoroughly until well combined. Preparing the sauce in advance will make the cooking process much smoother.
Step 3
Heat a frying pan over low heat and add just a little bit of cooking oil (since mayonnaise and soy sauce already contain some oil, you don’t need much). Add the prepared seasoning sauce and 4 tsp of water to the pan. Cook over medium-low heat, stirring constantly to prevent the sauce from burning.
Step 4
Once the sauce begins to simmer gently, add the Jinmi-chae that was pre-mixed with mayonnaise to the pan. It’s important to keep the heat at medium-low and stir well to ensure the sauce evenly coats the Jinmi-chae.
Step 5
When the sauce is evenly distributed on the Jinmi-chae and it starts to look slightly glossy, turn off the heat. Finally, drizzle in 1 tsp of sesame oil and sprinkle 0.5 tsp of toasted sesame seeds for an aromatic finish. Give it one last light toss, and your delicious spicy and sweet Jinmi-chae stir-fry is ready! It’s absolutely wonderful served over warm rice.
