Main Ingredients- 100g Dried Pollack Strips (Hwangtaechai): Choose strips with a chewy texture and rich flavor.
- 2 Tbsp Cooking Oil: For stir-frying the dried pollack.
- 2 Tbsp Gochugaru (Korean Chili Flakes): Adds a spicy kick. Adjust to your preferred level of heat.
- 1 Tbsp Sesame Oil: For a nutty aroma that enhances the dish’s overall flavor.
- 3 Tbsp Oligodang (Korean Corn Syrup) or Corn Syrup: Provides a mild sweetness that balances the spiciness.
- 1/2 Tbsp Minced Garlic: Adds a pungent garlic flavor that complements the pollack.
- 2 Tbsp Gochujang (Korean Chili Paste): The key ingredient for a spicy and sweet flavor profile.
Cooking Instructions
Step 1
Prepare the Dried Pollack: Briefly soak the dried pollack strips in cold water for about 1 to 2 minutes until slightly softened. Be careful not to soak them for too long, as they can become too mushy.
Step 2
Drain and Cut: Gently squeeze out excess water from the soaked pollack strips. Cut them into bite-sized pieces, about 5-7 cm long. Remove any tough or hard parts for a more tender bite.
Step 3
Stir-fry the Pollack: Heat 2 tablespoons of cooking oil in a frying pan over high heat. Add the prepared pollack strips and stir-fry until most of the moisture has evaporated. This step removes any raw smell and enhances the chewy texture.
Step 4
Make the Sauce: In a bowl, combine 2 tablespoons of gochujang, 2 tablespoons of gochugaru, 3 tablespoons of oligodang, 1/2 tablespoon of minced garlic, and 1 tablespoon of sesame oil. Mix well to create a flavorful sauce. Feel free to adjust the sweetness and spiciness to your liking.
Step 5
Combine and Mix: Add the stir-fried pollack to the prepared sauce. Gently mix and coat the pollack evenly with the sauce. Continue mixing for another 1-2 minutes to allow the flavors to meld. If you find the taste a bit mild, you can add a splash of soy sauce.
