Quick Napa Cabbage Geotjeori Recipe Using Leftover Kimchi Seasoning
If you have leftover whole napa cabbage from making kimchi or leftover kimchi seasoning, don’t let it go to waste! Make fresh and delicious napa cabbage geotjeori right away. The combination of its crisp texture and spicy-sweet seasoning is superb.
Essential Ingredients- 1.5 heads Napa cabbage
- 1.5 cups Coarse salt for salting
Seasoning Ingredients- 500g Pre-made Kimchi Seasoning
- 1 Tbsp Sugar (for sweetness adjustment)
- 2 Tbsp Toasted sesame seeds
- 500g Pre-made Kimchi Seasoning
- 1 Tbsp Sugar (for sweetness adjustment)
- 2 Tbsp Toasted sesame seeds
Cooking Instructions
Step 1
Wash the napa cabbage thoroughly under running water. Cut it into bite-sized pieces (about 3-4 cm wide). Remove any dirty outer leaves before using.
Step 2
Place the cut cabbage in a large bowl. Sprinkle evenly with 1.5 cups of coarse salt for salting. Add a little water (about 1/2 cup) to help the salt adhere, and gently mix with your hands. I salted mine for about 1 hour and 30 minutes, but you can adjust the salting time depending on the amount of salt and the state of the cabbage. If you want to salt it faster, you can use a bit more water and salt for about 30 minutes to 1 hour.
Step 3
The cabbage is properly salted when you bend the stem and it becomes pliable without breaking. If you already have salted cabbage from making kimchi, you can use that. Just rinse it and cut it into bite-sized pieces.
Step 4
Rinse the well-salted cabbage lightly 1-2 times under cold running water to remove excess salt. Be careful not to wash too vigorously, as this can remove all the flavor. Drain the rinsed cabbage thoroughly in a colander.
Step 5
Prepare the seasoning for your delicious geotjeori. Use 500g of kimchi seasoning leftover from making kimchi. Utilizing leftover kimchi seasoning significantly simplifies the process by skipping the tedious seasoning preparation.
Step 6
My family’s kimchi seasoning typically doesn’t include added sugar, so I add 1 tablespoon of sugar here. Adjust the sweetness to your preference. Finally, generously sprinkle in 2 tablespoons of toasted sesame seeds. Gently mix everything with the prepared cabbage until well combined. Your crispy and delicious napa cabbage geotjeori is ready! It tastes best when enjoyed immediately.
