Essential Ingredients- Approximately 50 fresh ark clams
- 1 chili pepper (e.g., Cheongyang chili)
- 1/5 stalk green onion
Cooking Instructions
Step 1
First, prepare the fresh clams. Rinse about 50 clams several times under running water to remove any debris. Scrubbing them with 1 Tbsp of coarse salt will help clean them thoroughly.
Step 2
Secret to boiling clams: Add 1 liter of water and 1 Tbsp of soy sauce to a pot and bring to a boil over high heat. Once the water is boiling vigorously, add about 50 prepared clams. Gently stir the clams with a spatula in one direction to prevent them from clumping together, and boil for 1-2 minutes. As soon as the clam shells begin to open slightly, turn off the heat immediately. Let them steam for 1 minute with the lid on, then drain right away. This prevents them from becoming tough.
Step 3
Making the delicious seasoning: Finely mince 1 chili pepper and 1/5 stalk of green onion. In a large bowl, combine the minced chili pepper and green onion with 5 Tbsp soy sauce, 2 Tbsp red pepper flakes, 1 Tbsp minced garlic, 1 Tbsp sesame oil, and 1 Tbsp toasted sesame seeds. Mix well to create the delicious seasoning for the seasoned clams.
Step 4
Preparing the boiled clams: Once the boiled clams have cooled slightly, pick them up one by one. Using the pointed end of the clam, carefully detach one half of the shell to separate the meat. If the shell is difficult to remove, using a spoon can be helpful.
