Main Ingredients- 400g boneless chicken thigh or breast
- 1 stalk of green onion
Special Sauce Ingredients- 4 Tbsp soy sauce
- 1 Tbsp minced garlic
- 2 Tbsp cooking wine (Mirin or Cheongju)
- 1 Tbsp sugar
- 1 Tbsp corn syrup or oligosaccharide
- Pinch of black pepper (freshly ground pepper adds more flavor!)
- 4 Tbsp soy sauce
- 1 Tbsp minced garlic
- 2 Tbsp cooking wine (Mirin or Cheongju)
- 1 Tbsp sugar
- 1 Tbsp corn syrup or oligosaccharide
- Pinch of black pepper (freshly ground pepper adds more flavor!)
Cooking Instructions
Step 1
First, prepare the green onion. Divide the green onion into two parts: finely mince half of it to add to the sauce, and cut the other half into bite-sized pieces (about 1-2 cm) to stir-fry with the chicken.
Step 2
Rinse the boneless chicken and cut it into bite-sized pieces, about 3-4 cm. Using chicken thigh will result in a more tender and juicy Chicken Bulgogi.
Step 3
In a large bowl, combine the bite-sized chicken pieces with all the ‘Special Sauce Ingredients’: soy sauce, minced garlic, cooking wine, sugar, corn syrup, and pepper. Add the minced green onion as well. Mix everything together thoroughly with your hands, ensuring the chicken is evenly coated. Let it marinate for at least 10 minutes for the flavors to meld beautifully.
Step 4
Heat a non-stick pan over medium heat. Add the marinated chicken to the hot pan and begin to stir-fry. Use chopsticks or a spatula to gently separate the chicken pieces so they don’t stick together. Cook until the surface of the chicken turns opaque.
Step 5
When the chicken is about 70-80% cooked and starts releasing its juices, add the chopped green onions. Continue to stir-fry for another 2-3 minutes until the green onions are tender and the chicken is fully cooked. For an extra kick, you can add chopped chili peppers or sliced onions.
