Main Ingredients- 2 medium potatoes
Seasoning Mix- 8g minced garlic (approx. 1/2 Tbsp)
- 1 Tbsp gochugaru (Korean chili flakes, adjust to taste)
- 1 Tbsp soy sauce
- 1/2 Tbsp gochujang (Korean chili paste)
- 1/2 Tbsp oligosaccharide (or other sweetener, adjust to taste)
- Pinch of black pepper
Finishing Touch- 1ml sesame oil (a tiny amount)

Cooking Instructions
Step 1
First, wash the potatoes thoroughly, peel them, and cut them into bite-sized pieces (about 2-3 cm thick). Soak the cut potatoes in cold water for about 10 minutes to remove excess starch; this will result in a cleaner braised dish. Drain them completely before cooking.
Step 2
To achieve a deep flavor, it’s best to mix the seasonings in advance. In a small bowl, combine the minced garlic, gochugaru, soy sauce, gochujang, oligosaccharide, and black pepper. Whisk well to create the seasoning paste.
Step 3
Place the prepared potatoes in a wide frying pan or pot. Add enough water to cover the potatoes. Start cooking over high heat (strong fire).

Once the water begins to boil, reduce the heat to medium. When the potatoes are slightly tender, carefully flip them over to ensure the seasoning coats them evenly.

When the potatoes are somewhat cooked, take the bowl with the prepared seasoning paste and mix in a small amount of water (about 1-2 tablespoons). This step helps prevent the seasoning from burning and allows it to penetrate the potatoes better.
Step 6
Pour the diluted seasoning mixture evenly over the potatoes in the pan. Ensure the seasoning coats the surface of the potatoes.

Rinse the seasoning bowl with a little more water (about 1/4 cup) and pour this liquid into the pan with the potatoes. Reduce the heat to low and let it simmer gently until the sauce thickens.

Now, simmer gently over low heat, with or without a lid, allowing the seasoning to deeply infuse into the potatoes. Check periodically to prevent sticking.

As the braising liquid reduces and the potatoes become glossy, use a spoon to scoop up the flavorful sauce from the bottom of the pan and spoon it over the potatoes. This process enhances the potatoes’ flavor profile.

If the sauce seems to have reduced too much, add a little water bit by bit until you reach your desired consistency. The key is to simmer until the sauce coats the potatoes like a glaze.

Continue simmering until the sauce is reduced to about two-thirds of the way up the potatoes, creating a rich, coating consistency. The potatoes are ready when they are tender enough to be easily pierced with a fork.
Step 12
