Ingredients
  • Pork ribs 400g
  • All-purpose seasoning sauce 1 Tbsp
  • Minced garlic 1 Tbsp
  • Gochugaru (Korean chili powder) 1 Tbsp
  • Corn syrup (or rice syrup) 1 Tbsp
  • 1/4 Onion
  • Chopped green onion 2 Tbsp
  • Water 1 cup
  • Tteokbokki rice cakes 5-6 pieces
  • Processed cheese slice 1
  • Bay leaves 2-3
  • Cheongju (rice wine) or cooking wine 1/2 cup

Cooking Instructions

Step 1

To remove any gamey odor from the pork ribs, start by preparing a boiling liquid. In a large pot, combine 6 cups of water with 1/2 cup of cheongju (or cooking wine) and 2-3 bay leaves. Add the pork ribs to this mixture and bring it to a boil.

Step 2

After parboiling the ribs for about 10 minutes, drain them and rinse thoroughly under cold running water. This step helps to remove any impurities and blood, ensuring a cleaner taste in the final dish.

Step 3

Now, it’s time to season the ribs. Place the rinsed ribs back into a clean pot. Add 1 Tbsp of all-purpose seasoning sauce, 1 cup of water, 1 Tbsp of minced garlic, 1/4 onion roughly chopped, and 1 Tbsp of gochugaru. A dash of black pepper will enhance the flavor. Bring this mixture to a boil.

Step 4

Once boiling, reduce the heat to medium. Spoon some of the cooking liquid over the ribs periodically to ensure the flavors distribute evenly. Let it simmer for about 20-25 minutes, or until the ribs are tender and well-coated in the sauce. Be sure to stir occasionally to prevent sticking.

Step 5

When the ribs have absorbed the flavors nicely, add 5-6 pieces of tteokbokki rice cakes and 2 Tbsp of chopped green onions. Continue to simmer until the sauce has thickened to a luscious, coating consistency and the rice cakes are tender.

Step 6

For the final touch of sweetness, stir in 1 Tbsp of corn syrup (or rice syrup) once the sauce has become nice and thick. This will give the ribs a beautiful glossy finish and a delightful sweet-spicy balance.

Step 7

I personally enjoy adding cheese for an extra layer of creaminess. Since I didn’t have mozzarella on hand, I opted to top it with a processed cheese slice. Let it melt gently over the hot ribs for a touch of indulgence.
