Key Ingredients for Spicy and Sweet Braised Pork Ribs- 1kg Pork ribs
- 1 fresh Pear
- 5-6 dried Bird’s eye chilies (adjust to your spice preference)
- 1/2 soju cup Soy sauce for soup (approx. 30ml)
- 1 soju cup Dark soy sauce (approx. 60ml)
- 1 soju cup Mirin or Cheongju (approx. 60ml)
- 1/2 soju cup Plum extract (Maesil Cheong) (approx. 30ml)
- 1 soju cup Sugar (approx. 60ml)
- 2 tablespoons Spicy Gochugaru (Korean chili flakes)
- Pinch of Black pepper
- 1 teaspoon Dasida (or other umami seasoning)
- 2 tablespoons Minced garlic
- 1 stalk Green onion
- 2 Serrano peppers (Cheongyang peppers)
- 2 Shiitake mushrooms

Cooking Instructions
Step 1
First, soak the pork ribs in cold water for about 1 hour to remove any blood. It’s a good idea to change the water a few times during this process. This step is crucial for eliminating any gamey smell.
Step 2
Now, let’s make the delicious sauce! In a blender, combine the peeled pear, bird’s eye chilies, soy sauce for soup, dark soy sauce, mirin, plum extract, sugar, spicy gochugaru, and minced garlic. Blend until smooth. Blending the ingredients ensures the sauce coats the ribs beautifully and the flavors meld well.
Step 3
Place the blood-drained pork ribs in a pot along with the odor-removing ingredients (bay leaves, mirin, minced garlic) and parboil them. Once the water comes to a rolling boil, cook for another 2-3 minutes, then turn off the heat. Rinse the lightly cooked ribs under cold running water. You only need to cook the surface slightly at this stage.
Step 4
We’ll now use a pressure cooker to make the ribs incredibly tender and juicy. Transfer the cleaned pork ribs to the pressure cooker. Pour the prepared sauce over the ribs. Add just enough water so the ribs are mostly submerged, but not completely covered. Adding too much water can dilute the flavor.
Step 5
Select the ‘Steam’ or ‘Multi-purpose’ setting on your pressure cooker and cook for 30 minutes. The pressure cooker will ensure the ribs become wonderfully tender. Once the cooking time is up, carefully release the steam and open the lid.
Step 6
Transfer the tender ribs from the pressure cooker to a pot to reduce the sauce. At this stage, it’s a good idea to skim off some of the excess pork fat accumulated at the bottom for a cleaner taste.
Step 7
Once the sauce has reduced slightly, add the prepared green onions, Serrano peppers, and shiitake mushrooms (sliced). Simmer for about 3 more minutes. Your delicious spicy and sweet braised pork ribs are now ready! Enjoy them with a side of rice.
