Main Ingredients- 2 prepared eels
- 1/2 onion
- 1/2 stalk of green onion
- 5 cloves of garlic
- 3 chili peppers (green or red)
- A little cooking oil
Sauce- 1.5 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Oligodang (corn syrup)
- 3 Tbsp Soy sauce (brewing soy sauce)
- 1 Tbsp Sugar
- 1 Tbsp Minced garlic
- 1 Tbsp Sesame oil
- 1 Tbsp Mirin (rice wine)
- 1.5 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Oligodang (corn syrup)
- 3 Tbsp Soy sauce (brewing soy sauce)

Step 1
Hello everyone! Today, we’re making ‘Braised Eel’, which has a different charm from the Stir-fried Eel we introduced last time. Let’s start this delicious recipe that will make you finish a bowl of rice in no time!
Step 2
First, wash the eels thoroughly under running water. After washing, gently pat them dry with paper towels. This helps reduce any fishy smell and prevents oil splatter during cooking.

Eels have a sticky slime that makes them slippery, so be extra careful when cutting to avoid injuring yourself. Carefully cut the eel into bite-sized pieces (about 3-4 cm). Cutting them too thin might cause them to break apart, so aim for a moderate thickness.

While preparing the eel, let’s also chop the vegetables. Slice the onion into strips, and diagonally slice the green onion. You can slice the garlic thinly or use whole cloves. Slice the chili peppers diagonally to add a spicy kick. If you like it spicier, use green chili peppers, or for added color, use red chili peppers.

Now, let’s make the essential sauce for our delicious braised eel! In a bowl, combine Gochujang, Gochugaru, Oligodang, soy sauce, sugar, minced garlic, sesame oil, and Mirin. Mix well until the sugar is dissolved. Making the sauce in advance can save you time during cooking.

Lightly oil a heated pan and add the cut eel. Stir-fry over medium heat until lightly browned. Once the eel starts to release some oil, add enough water to cover it lightly. This step helps to remove any remaining fishy odor and adds depth of flavor.

When the eel is tender and almost cooked, add the prepared onion, green onion, and chili peppers. Cook until the vegetables soften. Then, pour in all the pre-made sauce and mix well. Heat control is important here: bring to a simmer over medium heat, then reduce to low heat as the sauce thickens to prevent burning. Stir occasionally to ensure the sauce coats everything evenly.
