Summer Delight! Super Simple Spicy and Sweet Bibim Udon Recipe
While warm broth udon is delicious, chilled bibim udon is the perfect summer treat! This recipe introduces a bibim udon that’s both satisfying and delicious, even when enjoyed alone. Add plenty of vegetables for a refreshing crunch and abundant flavor, and awaken your appetite with a sweet, sour, and spicy sauce. It’s perfect for a late lunch or a light dinner. Main Ingredients- 1 Sanuki Udon noodle pack
- 1 leaf Red cabbage
- 1/4 Cucumber
- Pickled radish (optional)
Dressing- Gochujang (red chili paste) 1 part
- Cho-gochujang (sweet and spicy red chili paste) 1 part
- 1 Tbsp Allulose or Oligosaccharide
- Sesame oil, a drizzle
- Toasted sesame seeds, a sprinkle

Cooking Instructions
Step 1
Fill a pot with plenty of water and bring it to a boil over high heat. This water is for boiling the udon noodles, so it needs to be fully boiling for them to cook properly.
Step 2
Prepare the fresh vegetables. Thinly shred the red cabbage and thinly slice the cucumber on a diagonal. (Feel free to add other vegetables like carrots or cabbage according to your preference.)
Step 3
Once the water is rapidly boiling, add the udon noodles and cook for the time indicated on the package. It’s best to use a timer to ensure the noodles are cooked to a chewy texture.
Step 4
Rinse the cooked udon noodles immediately under cold running water to cool them down, then drain them thoroughly in a colander. If water remains, the sauce may become diluted.
Step 5
In a bowl, combine the drained udon noodles and all the prepared vegetables. Add the dressing ingredients (Gochujang, Cho-gochujang, Allulose or Oligosaccharide) and a drizzle of sesame oil and sprinkle of sesame seeds. Gently mix everything together by hand until well combined. Adjust the seasoning to your taste.
Step 6
Transfer the delicious bibim udon to a serving bowl. You can add a hard-boiled egg or seaweed flakes as toppings for extra flavor. Enjoy your cool and tasty meal!
